1. GENERAL INFORMATION:
Amaranth or Kiwicha was domesticated in the prehispanic age, approximately from 2.000 BC.
In Peru, Amaranth is found in the coast, in the mountains and in the high jungle at 3.500
meters above sea level.
It is organically grown, due to the special climatological characteristics of the ecological soils of
Peru.
Even though it is a small plant, it is abundant: one plant can produce more than 100.000 seeds
four to six weeks after the sowing.
Its zenith fame arrived in 1985 when NASA used Amaranth in the food diet of the astronauts,
because of its big properties conservation capacity during long time in outer space.
In Peru, seasonality offer is the whole year.
2. DESCRIPTION:
Amaranth is a dicotyledon plant, known as Amaranthus caudatus Linnaeus, from the family
Amaranthaceae.
The Amaranth that we offer belongs to the varieties Noel Vietmeyer and Óscar Blanco;
Amaranth is exported dry and without husk.
Amaranth has a high protein proportion (16%).
It is the cereal with the greatest content of lysine (soya and other cereals present lacks of
lysine).
In comparison with other cereals, it also contains a higher content of calcium, phosphorus, iron
and vitamines A and C.
It is a very digerible and nutritious seed, due to its high content of essential amino acids.
Its fiber, in comparison with wheat and other cereals, is thin and soft.
