Ed’s letter
Christmas and New Year are often a time of mixed
blessings. There’s the fun of Christmas, and the
stress of Christmas. And long dark afternoons
but sparkling crisp mornings. It’s often a time of
change or upheaval and the additional pressure
can bring crises to a head; but it’s also a time for
celebration, renewal and repositioning.
This issue of Title represents some of the magic
and regeneration that this time of year brings,
and looks at the positive changes that can be
made going forward with our wellness special,
exploring ways to improve mind, body and even
soul. There’s also a chance to detox your finances,
or retox with decadent food and drink! And loads
more besides. You can see all that in the contents
list. But we also pause for a minute to look back
over the past year – our first year of existence –
and celebrate some of our favourite moments.
From the start we made a decision that after every
six issues of Title Sussex we would take the design,
content and styling and give the magazine a shake-
up. Our goal was always to create something
different from our competitors and we’ve
unquestionably done that. But predictably we’ve
seen some copycat behaviour creeping in. Whilst
we’re flattered – after all, imitation is the sincerest
form of flattery – we knew this might happen so for
us it’s important to keep staying ahead.
This is the last issue of the magazine you will
see in this format. From Issue 7 we have some
big changes coming, as well as some new
publications and a website restyle. We’re really
excited about it! The next issue will be the Love
& Weddings special, and we’re working on it
already. So see you in the bright new year, and
we hope you have a lovely Christmas and New

A winter snap
A timeless midwinter scene in the heart of Sussex scooped
Emma Varley from Pulborough first place in this year’s Sussex
Wildlife Trust’s Photo Competition. Emma’s picture won the
public vote and a £100 cash prize.
She said, “I took a
detour on my way
to work looking
for a place to
photograph. I got
rather lost but
eventually found
somewhere to pull
up, I think near
Cowfold. Walking
along the edge of a field, I turned a corner and was amazed to
find this breath-taking view. It seemed absolutely timeless and
completely captured the beauty of a Sussex winter landscape
to me.”

Keeping spooky books
As if Preston Manor in Brighton
wasn’t spooky enough already,
they’ve just recently acquired
a ‘haunted ledger’, donated by
terrified Josephine Benyovits. The
1915 shop ledger was found bricked up in a jeweller’s wall in
Brighton’s East Street in 1988 by her father, but having taken it
home, they apparently suffered a number of spirit visitations.
Apparitions appeared, including a group of men, woman and
children, and a soldier with a horse. Josephine says that one
of the spirits told her the ledger must be returned to Brighton
for the centenary of its first entry – prompting a call to the city’s
spookiest site, Preston Manor.
Preston Manor Venue Officer Paula Wrightson said, “At first we
weren’t sure whether we’d take it until the family impressed
on us quite how scared they were. When I had a phone
conversation with Josephine she seemed petrified!”

This is a brand new tour offering a behind-the-scenes glimpse
of the Royal Pavilion’s basement and tunnel, and a chance to

Bodiam Castle is one of the county’s treasures; an archetypal
14th century moated castle with ruined interior - a glimpse
of medieval splendour. Recently having undergone a
refurbishment of the tea rooms, and looking ahead to the

After a considerable hiatus, the infamous Rocky Horror stage
show returns in full regalia to amuse and outrage a whole new
generation of virgins. First performed in 1973 and penned by
Crystal Maze star Richard O’Brien, the Rocky Horror Show –
and Picture Show – has entertained the risqué amongst us for
decades, and it’s now coming to the Theatre Royal in Brighton.
It tells the story of Brad and his fiancée Janet, two squeaky-
clean college kids who meet Dr Frank’n’Furter by chance when
their car breaks down outside his house. It’s an adventure
they’ll never forget, with fun, frolics, frocks, and frivolity. For
those of you who haven’t been before, showing up to watch in
full underwear tackle is the

“You’re late, where have you been?” comes the high pitch yell
from above.
“Don’t blame me; it’s the bloody buses.” I reply, closing the
door carefully behind me so as not to dislodge the flashing
wreath. “I was at the bus stop and the orange lettering said the
no. 7 was a minute away, I could see that it was only 100 metres
further down North street. I watched it crawl towards me over
the next 20 minutes while the sign said due.”
“You’ll be pleased to hear I’ve virtually sorted out Christmas
online - tree, food, presents and animated reindeer.” Says the
wife, smiling broadly.
“What, like Bambi?” I say.
“Sort of. We need to go down the phone shop now – I need to
show you something.” She orders.
The boy in the shop gets out this smart phone and starts talking
in tongues – something that seems to excite the other half. “Bit
big isn’t it?” I enquire.
“That’s what everyone wants now.” The boy replies.
“I thought technological progress was making everything
smaller.” I say.
I get looked at disapprovingly twice. “Look it takes moving
pictures – look at those waves darling,” says the wife.
“You mean videos”, I say.
“No,” says the boy laughing. “These are animated, they are
moving pictures.”
“I believe that’s what they said about the first films of the late
nineteenth century.” I retort.
I had a pay-as-you-go mobile thrust into my hand some years
ago. We were off to Cyril’s 50th in Malaga. I had refused to fly
and instead took the leisurely night trains to the destination. It
also gave me the perfect opportunity to stop off in Madrid and
see my old friend Jasper on the way back. The phone would
at least come in handy to ring him when I arrived. Apparently
it would also come in handy so the wife could monitor my
progress and arrange meeting me at the other end - even
though I had supplied her with the full set of Spanish train
timetables.
Instead I received a list of jobs that I needed to do on my return,
all manner of gripes about having to travel on one’s own and
a text to say she couldn’t meet me at the station. The fact that I
had taken two days to get there prompted much jovial banter
at Cyril’s villa. As I left two days later the phone was buzzing.
That unpronounceable Icelandic volcano had blown its top.
Every guest was now ringing me about how to get back to
Blighty – as though I was running an eco travel agency.
When I arrived in Madrid I phoned Jasper only to be told by
some computerised voice that I had insufficient funds to make
the call but I could top up by ringing this number and using my
credit card. I did as the computer asked – only to be met by the
same message. The phone went in the bin outside the nearby
phone box. Now it seemed the wife thought it time for me to
re-enter the mobile generation this Saturnalia. “I’m not sure I’m
ready for another phone.” I say.
“It’s not for you, you’re buying it for me”, she exhorts.
“Oh.” I say relieved and feeling for my wallet.
“Can I get tinder on it.” She says.
The boy nods, looking at me. I just shrug my shoulders, “It’s all
Double Dutch to me,” I say.

We’ve had some amazing experiences working on our
fashion shoots but working at Gun Hill Studios was something
we were all properly excited about. Located in deepest East
Sussex, it’s got the largest infinity cove in the whole of the
south east and has not one, but two massive turntables based
in the floor. It’s used a lot for photographing amazing cars
and bikes (there was a beautiful Harley still propped up by the
wall when we got there!) but we loved the look for creating
a sense of space without boundaries. For those of you who
don’t know what an infinity curve is, it’s a studio with curved
edges so that you cannot see where the walls are, basically.
And it’s very disconcerting to stand in – you lose all sense of
perspective!
We had a much bigger team on hand this time, including
Ruby the pug who completely fell in love with designer Isaac
Raymond and hair stylist Yo. Not sure the studio team Emma
and Rupert have ever had a pug as part of a production team
but hey, we like to be there with the firsts.
Setting up the lighting took ages – you can see from the
photos what the actual cove looks like and it takes very careful
lighting. We dubbed photography team Erika and Matt the
lighting geeks but it was fantastic watching all the technology
come together. We also had enormous fun playing with
coloured gels and smoke machines. We wanted to create an
ethereal winter wonderland feel to the images.
The clothing sourced for this shoot from all the designers and
creatives was amazing. Lindsay Hills brought in some stunning
pieces and we had tons of beautiful hair pins, floating feathers
and magical looks from all across Sussex. Models Iona and
Charlotte looked absolutely extraordinary.
But it was the stylists Charlene (makeup) and Yo (hair) who
had the biggest fun I reckon. Normally we give them a specific
brief for a shoot, and they have limitations, but for this one
we told them to go crazy, and they totally did! Hair pieces,
crazy eyelashes, sequins, silver tattoos – you name it, they
stuck them on! And the result was just fantastic – whimsical,
creative and fanciful. A magical fairyland look complete with
just a good old kick of sass.
Finally, where would we be without our runners?! Lili and
Sander worked really hard all day, running around, helping,
and even walking the dog. And the results? Well we think it’s
our most insane, fun, crazy shoot to date and I have no idea
how we’re going to top this!

THE NEED FOR TWEED….
Wearing a suit really doesn’t have to be a formal thing, and I am a great fan
of tweed. It can be dressed up or dressed down to suit the occasion – be it
work or play. You could even take your dog out for a walk wearing it! It’s
also excellent for wearing as separates – just the trousers, just the jacket, or
waistcoat on its own.
So what is tweed?
Tweed is typically described as a rough woollen cloth, typically made of
mixed flecked colours, originally produced in Scotland. There are many
different variations of cloth that fall under the umbrella of ‘tweed’ for example;
Donegal, Harris, Cheviot and Saxony.
Tweeds have advanced over the years and there are many distinctions of
twill weaves available now, including herringbones, chevrons, checks of all
sizes, marls, and flecks; all available in pretty much any colour you desire. The
majority of tweeds are made with pre-dyed yarns, but there is also the option
of piece dying batches of tweeds. Fabric production has evolved massively,
great for us tailors as it means we can offer cloths in a wide variety of colours
and weights.
Marvellously, one of this season’s hottest trends is tweed.

This month I would like to introduce
you to the very enigmatic Marc
Abrahams. I first met Marc around
12 years ago when we were both
competing against each other in The
Brighton Business Awards. When I was
first introduced to Marc, I was quite
taken aback. During my childhood I
always considered that a doctor was
one the most intelligent occupations
to aspire to. However, being a vet,
and a master of so many species, is an
even more difficult career pathway to
achieve. And on the flip side, with all
that education, these people can get
a little nerdy. But here is a man that is
charming, exuberates confidence and
is a VET! A rock star of a vet!
Marc Abrahams is not only a rock
star of a vet; he’s also one that has
been recently named ‘Vet of the Year
2015’. He’s also a keen animal welfare
campaigner and often puts himself
forward to speak for the animals. You’ve
probably seen Marc in various TV
shows (Paul O’Grady, This Morning) but
he also runs a campaign to end Puppy
Farm Cruelty. Puppy farming is the mass
commercial production of puppies
in horrific conditions, sold via pet
shops, garden centres, online and in
many free newspaper advertisements.
These puppies, commonly riddled
with incurable diseases often become
seriously ill shortly after arriving in their
new homes, their mothers still stuck
hundreds of miles away in squalid
conditions.
Two years ago, Marc took his campaign
to Westminster. Numerous high
profile celebrities, including comedian
Ricky Gervais, musician Brian May and
actor Peter Egan support his ‘Pup Aid
Campaign’.
We like to think of Marc as the leader
of a rebellious campaign, the animal
welfare mafia. This is where our
partnership with Marc really takes to
its own. We help Marc come across
as hardworking, intelligent, confident
and driven in pure rebellious style.
Choosing the clothing to represent that
is always a fantastic challenge for us.
Marc is not a fan of formal wear. Who
says that you have to wear a plain and
official looking suit when addressing
Parliament, why does it have to be
formal? We love the thought that he
uses our anarchic take on tailoring to
help push his campaigns through.
Marc’s message is simple. “When
choosing a dog, prospective dog
owners should always consider
adopting from a reputable shelter. Or,
if looking to buy a pup contact the
Kennel Club for their list of responsible
assured breeders where puppy and
mother will always be seen interacting
with each other. By adhering to these
rules, it’s extremely difficult to end up
with a sick pup – and better still this
cruel industry will be starved out of
business!”

Style: Everyday/casual
On the day of the shoot: Firstly, Tony’s
beard was cut down with beard clippers
in order to tidy and remove unwanted
long and stray hair. We then shaped
and sharpened around his jaw, mouth
and cheeks in order to create definition
throughout his beard, this is best
achieved by following the natural flow of
the beard.
Tips and Tools: Using a small pair of
beard clippers with a range of guards
that is adequate to the desirable length
of the beard. A beard balm and comb to
soften and smooth facial hair.
TONY’S GROOMING
“I would normally start the day with a shower and wash my
face with Bull Dog original face wash or face scrub. I also use
their moisturiser afterwards. On my hair I wash with Goldwell
Dualsenses Man Thickening shampoo. I dry my hair with KMS
hair play (salt spray) and then style with the dry wax spray or a
thickening powder.”
How much do you spend per month on your grooming?
“Per month I would normally spend about £30 on haircuts and
£10-£20 on products.”
What do you do now that you wouldn’t have dreamed of
doing five years ago?
“I tend to use more than one product on my hair and face to
get the results I want. I was given some great advice from my
hairdresser Jenny Brown. She works here at Cove and was the
one who advised me on what to use to get the results I wanted.
Five years ago I would have used far too much product. It’s
about working out what’s best for your hair and skin type.”
Is grooming for hipsters, or the hip?
“I would say it’s for everyone. Everyone should take pride in
their appearance. Why would you not want to feel good about
yourself?”
Tony’s top tips
“Best advice I could give would probably be to just stick with
the same products if they are working well for you. I have quite
thin hair so constant use of the Goldwell shampoo is giving me
the best results.”

using a generous amount of beard
and moustache wax to style it into the
handlebar.
Tips and Tools: I used a small, fine
comb and strong wax as facial hair

something tough to give it a firm hold!

NICK’S GROOMING
“I try to visit a barber for a wet shave at least
twice a week as I enjoy the relaxation time. On
other days, I shave myself with a shaving bowl
and brush rather than foam. The brush helps to
lift and soften the beard and the soap is kinder
to the skin. On a normal day, I will lightly wax my
moustache into a well kempt walrus, moisturise
my face and comb my hair. On more formal
occasions, I will heavily wax my moustache
into a sculpted handlebar with the ends curled
upwards, moisturise my face and style my hair
with product. At night, I wash my moustache
with Pears Soap. My family have always used
Pears, so its smell has good associations for
me. Also, it’s not harsh so keeps my moustache
feeling soft. Then moisturise again.”
How much do you spend per month on your
grooming?
“£120”
What do you do now that you wouldn’t have
dreamed of doing five years ago?
“Moisturise.”
Is grooming for hipsters, or the hip?
“Grooming is for anyone who cares about their
appearance and wants to look their best.”
Nick’s top tip
“Always carry moustache wax in case you
need to retouch your ’tache in emergencies. I
keep mine in my trouser pocket so it’s at body
temperature.”

Style: Well groomed
On the day of the shoot: We wet-shaved
Harry with a classic cut throat razor using a
high quality shaving gel and a sharp blade in
order to give him a close shave and a smooth
finish. I finished the shave with a post shave
balm for sensitive skin to avoid irritation.
Tips and Tools: Use plenty of warm water or
a hot flannel to soften bristles. Good quality
shave gel, a fresh blade every time a shave
is commenced, follow the grain of the hair,
rinse razor often in hot water, and post shave
balm in order moisturise and cool the skin
following a shave.

HARRY’S GROOMING
“First thing I usually shave and that can be anything from
a touch up around my neck line to a change of facial
hairstyle. Up until recently I had a fairly large beard that
still involved daily upkeep. I find it weird that some guys
don’t buy conditioner or face wash, not only just because I
find my hair easier to style after conditioning but because
it makes for healthier hair. My dad had already started
balding at my age so perhaps that’s got me worried!
Before I went clean shaven recently I’d use beard oil after
towel drying my beard, then I’ll put some mousse in my
hair and blow-dry into shape. I’ve always found my hair
hard to style due to it being very fine and straight so I use
a combination of a little heavy matte clay and finish up with
some weaker hairspray. I’ve tried to moisturise my face
after showering every day since I was about 15. I have my
mum to thank for that!”
How much do you spend per month on your grooming?
“Roughly £20-£30.”
Is grooming for hipsters, or the hip?
“Grooming is important for hygiene and it makes me more
confident. I learnt a lot of this stuff from my parents though
so I’ve never seen it as much of a hipster trait.“
Harry’s top tip
“For my fine hair I like applying a tiny amount of dry
shampoo after drying. It makes my hair more receptive to
styling and in combination with some volumizing powder
or hairspray will look good throughout the day.”
TIPS FROM CHYRESE
Men’s hair and fashion has always been
an interest of mine. I feel as though male
grooming has grown and become extremely
popular in recent years and I love all aspects
of hair dressing, but the traditional wet shave
has always really interested me as it is unlike
anything I’ve done before.
I believe there’s a gap in the market for
pampering services for men; a traditional
wet shave is perfect as it’s both relaxing
and luxurious. I wanted to bring something
unique to Cove in order to expand what we
can offer our clients. Being a woman, I was
definitely very excited when I jumped into
this role as I knew that not many women train
and offer traditional wet shaves.
My Predictions
In 2016 I see men moving on from the big
bushy beards and on to shorter beards or
stubble, and more of the clean shaven look.

here are many ways to relax,
some curl up in front of the TV
with a glass of wine,others enjoy
a leisurely jog, but now more
and more people are floating around
naked in pitch-black salt tanks after a
stressful day at work. And that’s exactly
how I spent one Monday evening.
Calm and relaxation for me are taboo
terms, I’ve got the energy of a nine-
year-old and total silence is my idea of
hell. However, when I was offered a total
sensory deprivation experience at The
Float Spa in Hove I jumped at the chance.
My knowledge of Floatation Therapy
is as vast as the pod I would squeeze
myself into, so I was understandably
nervous. Those nerves were instantly
dashed after a smiling welcome from
Camille, the owner of the Spa, and
Natalie, who was to become my salt
slumber supervisor for the evening.
With complimentary cucumber water
in hand I was given a quick tour of the
facilities and then it was go time. Natalie
showed me to a white room with a
table, shower and what was essentially
a white whale. She proceeded to open
its ‘mouth’ to reveal the salty abyss and
purple mood lighting contained within.
She then told me the dos and don’ts of
‘Floatation’. And I was able to ask the
three questions on all of our lips:
1. Is the water cleaned after every float?
2. Will it hurt if the water gets in your
eyes?
3. Can I go in naked?
Camille had already informed me that
all I had to bring with me was myself and
a hairbrush. Needless to say, the answer
was yes to each of those questions. My
clothes were off, the lid was shut and

ocean sounds surrounded me. There
are two lighting settings inside the
pod, on or off. I opted for off because I
wanted to completely submerse myself
into the sensory deprivation side of the
experience; it was float hard or float
home. Unfortunately while trying to
relax I splashed some of the salt water
into my eye. I then scrambled around
spraying myself in the face with spring
water to sooth my aching peepers.
After that incident I did my best to re-
relax and empty my mind of worries
and thought. As you lay there listening
to your heartbeat slow down you relax
into the experience, you begin to
realize why people do this. There are
no distractions in the pod, nothing to
fear, other than an eyeful of salt water. I
didn’t get the urge to check my iPhone
or pick at some cheese in the fridge.
The experience felt like both hours and
minutes, you have no sense of time or
space in there. After easing my way out
of the water I had a shower, made sure
I put my clothes back on and headed
back out to the reception. There Natalie
greeted me with a warm pot of herbal
tea and a delicious jar of homemade
sorbet. I can honestly tell you at that
moment I couldn’t have felt more zen.
I’m completely converted. Skeptical
at first about how an expensive salt
bath could cure what ails me, I now
completely understand the new found
demand for floatation. It’s something
that you’ve never experienced before
and what I believe to be the closest
you’ll get to an out of body experience,
without huffing paint thinner. All in all I
give the experience a solid 10/10 and
I will absolutely be returning in the
future. My only regret: forgetting to
bring my hairbrush.

It’s paved with good intentions, we know, and

can resist anything except temptation. BUT we
are going to try and get a bit healthier and less
frazzled for 2016 and this is where it starts…
WELLNESS OR THE ROAD TO HELL
Eat better
This is NOT the time of year for a big diet. It’s
winter and your body needs fuel. But it needs the right
fuel so instead of binge dieting after the crazy season and
sending your body into total shock, treat it kindly. Eat lots of
fresh fruit and veg, lean protein like chicken, fish or beans, and
good carbs. C’mon people, you know what to do. Get rid of the
rest of the mince pies and either drink that brandy or chuck it out.
Wine? A glass of red now and again is fine, but you don’t need
the whole bottle, followed by another bottle, then a row of shots
and some mescal for the cab ride home, do you? Make small
changes, eat better oils, chow down on some nuts and just
do a better job, OK?
Relax
Yeah, you heard us. Take time to relax – and no, that
doesn’t mean more time in front of the TV or Xbox.
How about a little yoga or meditation? Take time out to
unwind in a hot bath. There’s something just wonderful
about dropping gently into scented hot water and
laying back with a big fat sigh. We love ESPA Restorative

Get more sleep
Ah, bed. Make friends with
your bed and spend more time
together. Get some good bed-
time routines in place like killing

awesome for drifting off. So have
more sex.
More than anything for 2016,set yourself sensible goals and targets

the space of one month. Make gradual, overall changes and enjoy
feeling healthier, better and calmer. So you can be ready and
prepared for December 2016, and do it all again next year!
Exercise more
Not rocket science, is it. Factor in some
time for a bit more exercise but like with
the food, don’t go crazy straight after
Christmas, and you’ll feel a lot better. If
you go at this all gung-ho you will send
your body into shock and you’ll never
keep it up. Then you’ll hate yourself
for being flaky, so make sustainable
changes.Walk more. Swim once a week.
Go to the gym but not every day. Take
the stairs. And go for a walk outside
without staring at your phone at least
once a week. See the beauty of nature!
And risk getting run over less.

news, a review of the amazing Market restaurant

the brave new world of Market in Hove
W
hen I heard that Graze in Hove was having a
refurb and total makeover I was a bit unsettled.
I’m a bit like a child sometimes in that I don’t
really like change, and there was something
about that place that brought back happy memories of
eating in Soho in the ‘eighties, tucked away in sumptuous
dark hidey-holes with exceptional table linen and
extravagant food, and an even more extravagant wine list.
But I’m very happy to report that I needn’t have worried. In
fact, what has replaced the old guard is a thriving, buzzing,
eating environment that feels simultaneously European and
British, and where the service is good enough to feel a bit
upmarket, but the dining experience is relaxed and informal.
Gone are the dark corners and set tables, replaced by
long Spanish-style counter dining, and a handful of tables
scattered around. True to their roots, Kate and Manni have
stuck to the tapas style food that made their name, but it’s
been jazzed up considerably, much like the décor.
We went on a Tuesday night and it was rammed, which is
always a good sign, and the place was filled with a real range
of people – from gorgeous single girls doing a bit of work at
laptops, to groups of friends joyfully wading through piles of
food and wine. I loved sitting up at the counter and sticking
my beak into everything the staff are up to (I expect they
love customers like me). But I like to watch my food being
prepared, or ask questions about wines or dishes as the
team are bustling about. It makes me feel involved.
The staff on hand are all pretty knowledgeable about the
menu, and I love that. Is there a more annoying phrase in the
lexicon of dining language than, “Oh I’m not sure; hold on,
I’ll have to ask chef”? I want to think that the people who
work together know what the hell each other is doing, and
that includes whether or not there’s black pudding with the
scallops, or whether there’s shrimp in the fish stock. Call me
picky. But I’m very pleased to report that at Market, the left
hand very much knows what the right hand is doing.
The food was all lovely. There were so many little dishes I
can’t go through it all individually without rambling on like

some old duffer, but I have listed what we had above. Things that really stood out
for me were the goat’s cheese churros with gooey sweet truffled honey (an inspired
dish of decadent sumptuousness), the octopus, which was fresh and firm and not
all wobbly, which I can’t stand. The polenta balls were sticky and satisfying, but I’d
approach those with respect if you are planning to order a few different things as
they’re properly filling, and the truffled macaroni cheese, which was just sexy as
hell. Slightly disappointed in the brownie – the flavours were amazing but it was
a little dry, a touch overcooked. But hey; the place was heaving so we can forgive
them that, and honestly, the cheese board more than made up for it.
Get yourself to Market. I expect you should probably book, if they take bookings.
Take your time, and take in a few different dishes. And take a good friend. They’ll
thank you for it.

A CHANGE IS GOING TO COME
TIME TO WINE
I’m always keeping an eye on wine trends
– in a purely professional capacity, of
course – and with Prowein, the world’s
biggest wine exhibition, in Dusseldorf
this spring, I asked my mates Henry and
Cassie at Butler’s Wine Cellar what wines I
should be hunting down. Henry’s top tip for
2016 is to keep an eye out for wines from
Piedmont in Italy, which you’ll be familiar
with as hearty Barolo and Barbera reds.
The vintages coming out of Piedmont are
getting better and better, so Rioja better
watch out as the current red wine trend
of choice. In other booze news, Henry
reckons that Chardonnay will be cool again
with consumers. The heavy oak that we
associate with the Chardonnay grape is all
the fault of New World producers in the
1990s. It’s a tremendously versatile grape
and if you’re drinking white Burgundy,
Chablis or Champagne then you’re most
likely drinking Chardonnay grapes. Keep
an eye out for Californian Chardonnays
that are increasingly becoming more in-

embarrassment of the derelict Madeira Terraces will find resolve with
London’s Soho House achieving planning permission (fingers-crossed) for
a members bar and lounge, three funky restaurants and a seafood venture
with the very talented Ben McKellar of Brighton’s the Gingerman group. The
West Country’s Harbour Hotels group have purchased the seafront UMI on
the junction of West Street and Kings Road with a complete refurbishment
in early 2016, Starwood Hotels are due to open their incredibly cool ALOFT
concept hotel behind Brighton station, whilst Jury’s Inn takes over the former
Thistle Hotel on the seafront with significant investment. Meanwhile the Hotel
du Vin group have taken over Seattle at Brighton Marina which will shortly be
re-launching under their Malmaison brand.

The VerdiTa
With the festivities and excess of the holiday
season taking their toll, many people choose
to go on a detox/gym mission. As with all
things, moderation is the best policy. So we
firmly believe that it’s quality-over-quantity
policy that potential do-gooders should
adopt rather than a blanket ban.
Saying that, we do have an amazing non-
alcoholic ‘mocktail’ that can be turned into
a proper cocktail very quickly and this is a
heady mix of fresh botanicals, pineapple juice
and fresh chilli. It can be as hot as you like!
To jazz it the hell up, simply serve with a shot
of good 100% agave tequila on the side and
take alternating sips. By doing this you will
get the full flavour of the tequila which will be
complemented by the herbs in the Verdita.
Our particular favourites at the moment are
Aqua Riva Tequila, owned by the fabulous
Cleo Rocos and made in the Jalisco region
of Mexico; and Ocho Tequila (a truly unique
estate produced tequila as it was one of the
first to bear a Tequila vintage which signifies
which year, harvest or location it was made in).

Add all ingredients to a blender and blend.
Strain off the resulting mix to remove any of
the herbs and the chilli seeds. Then store in a
fridge for up to three days.

and out, we are loving this fresh-tasting, light soup.
It’s also a stunningly low 206 calories per serving. In
this vegetarian soup, the barley takes centre stage.
This grain is a good home remedy for water retention

SERVES 2
600ml vegetable stock (see below)
1 lemongrass stalk, bashed
80g pearl barley 1 small cucumber, deseeded and
sliced
3 spring onions, chopped, 1 green chilli, thinly sliced
1 tbsp tamari wheat-free soy sauce fresh root ginger,
peeled and thinly sliced, to serve
Bring the stock to the boil in a pan and reduce the
heat to a good simmer. Add the lemongrass and
pearl barley. Cover, leaving a bit of a gap between
the lid and pan so the stock doesn’t boil over. Once
the barley is tender, about 45 minutes, take the pan
off the heat and remove the lemongrass. Stir in the
cucumber, spring onions, chilli and tamari. Serve
with fresh ginger slices scattered over.
VEGETABLE STOCK
This makes quite a delicate, aromatic white vegetable
stock; perfect for the cleanse recipes.
MAKES 1 LITRE
1 leek, roughly chopped
1 white onion, roughly chopped
1/4 celeriac, roughly chopped
1 celery, roughly chopped
1 fennel, roughly chopped
6 garlic cloves, bashed
1 tsp coriander seeds
Sea salt flakes
A handful of soft herbs – such as
dill, coriander, tarragon
Add all the chopped vegetables to a large pot, along
with the garlic, coriander seeds and a little salt and
cover with about 1.2 litres of water. Bring to the boil,
then reduce the heat to a good simmer and cook for 45
minutes until all the vegetables have softened. Switch
off the heat and add your preferred soft herbs, then
leave to rest for an hour or so before straining through
a sieve lined with muslin or cheesecloth, discarding all
the solids. Transfer the stock to an airtight container.

1 litre/1¾ pints low-salt chicken stock
2 tsp Thai red curry paste
100g/4oz flat rice noodles
150g pack shiitake mushrooms, sliced
125g pack baby corn, sliced
2 skinless salmon fillets, sliced
Juice of 2 limes
1 tbsp reduced-salt soy sauce
Pinch of brown sugar
Small bunch of coriander, chopped
Pour the stock into a large pan, bring to the boil, then stir in the curry paste. Add the noodles and cook
for 8 minutes. Tip in the mushrooms and corn, and cook for 2 minutes more. Add the salmon to the pan
and cook for 3 minutes or until cooked through. Remove from the heat and stir in the lime juice, soy
sauce and a pinch of sugar. Ladle into four bowls and sprinkle over the coriander just before serving.

1 tbsp olive oil
1 garlic clove, sliced
500g/1lb 2oz courgettes, quartered
lengthways and chopped
200g/7oz frozen peas
400g can cannellini beans, drained and
rinsed
1 litre/1¾ pints hot vegetable stock
2 tbsp basil pesto (you can make your
own with fresh basil, olive oil, garlic and
Parmesan if you like)
Heat the oil in a large pan. Cook the garlic
forafewseconds,thenaddthecourgettes
and cook for three minutes until they start
to soften. Stir in the peas and cannellini
beans, pour on the hot stock and cook for
a further three minutes.
Stir the pesto through the soup with
some seasoning, then ladle into bowls
and serve with crusty brown bread.

stand-up to find out about his new show and what
it’s like to be back on stage after an extended break
N
oel Fielding stepped onto the Brighton Dome stage in December
mid-way through his his first solo tour for five years. The comedian
who, thanks to his work on The Mighty Boosh, Noel Fielding’s Luxury
Comedy and Never Mind the Buzzcocks, has an enormously loyal
following, was performing his new show, simply titled, “An Evening
with Noel Fielding.” Featuring Noel’s inimitable blend of stand-up, animation,
music and appearances by some of his best-loved characters, including The Moon,
The Dark Side of the Moon and Fantasy Man, it was a blinding show.
Noel and I are chatting in his north London studio. Surrounded by props – including
life-size cardboard cut-outs of a robber with a stripy jumper and a swag bag
and a nun wielding a huge gun – and his own arresting paintings, he makes for
marvellously entertaining company. It is a delight to spend an hour in the company
of this hilarious and magnetic comedian.
The five years away from the live arena only whetted Noel’s appetite for stand-
up. The performer, who has spent the last few years occupied by the meticulously
produced, semi-animated E4 show, Noel Fielding’s Luxury Comedy, begins by
underlining that nothing beats the rush generated by live work. “The problem with
TV is that it takes years to make and after a while you can’t remember what it’s like to
tell a joke and get a laugh from it,” he explains. “The great thing about live comedy
is that it cuts out the middle men - all those TV producers and directors. It takes out
everything that gets in the way, so it’s just you and the audience. It’s a really pure
set-up.”
Because it’s so deeply original and innovative, Noel’s comedy can divide people.
But he thinks that the infectious nature of his stand-up show can help to win over
the agnostics. “Some people might think they’re allergic to you, but if they come
to a live show and see everyone is laughing, it’s hard to say that it’s not funny. It
was the same with the Boosh. Sceptics
were convinced when they came to our
shows. As a stand-up, you spend all day
being nervous. But as soon as you step
onto the stage and get the first laugh,
it’s magic time. It’s like being in a dream.
It’s a real buzz.”
The comedian, who was joined on
stage by the loose stylings of his
brother Michael Fielding (best known
as Naboo and Smooth from The Mighty
Boosh) and the physical lunacy of
Tom Meeten (who plays Andy Warhol
in Noel Fielding’s Luxury Comedy),
explains exactly what his show was all
about. “The first half is set in a cabaret
club,” he reveals. “Then I get kidnapped
from my own show, and in the second
half the rest of the characters have to
find me. I play other characters during
the second half. It becomes like a play.
It’s a sort of farce.”
The evening also featured music
that Noel had composed with Serge
Pizzorno from Kasabian and some
characteristically entrancing stand-
up routines. Noel, who for many years
performed with his close friend Julian
Barratt in The Mighty Boosh, dubbed
“The funniest comedy double act in
Britain” by the NME, explains some of
the themes he addressed in the show.
“I touch on turning 40 and my Peter
Pan complex. Because I’m now 40,
I try to do a bleak bit, but of course it
soon becomes completely fantastical.
I attempt to go gritty, but I can’t help
going fantasy.”
As an example, Noel says he has
been working up the character of
Chicken Man. “He’s like a figure from
a Jodorowsky Spaghetti Western. He’s
half man, half chicken. He has to fight
a bandit, and he’s got Tourette’s. He’s
like a cross between A Streetcar Named
Desire and Foghorn Leghorn. He keeps
flipping in and out of madness.”
Noel’s comedy is always richly
imaginative, but can he tell if he’s gone
too far? “No!” laughs the comedian,who
has also acted in The IT Crowd, Nathan
Barley and Garth Marenghi’s Darkplace.
“Locked away in North London for years
making Noel Fielding’s Luxury Comedy,
we’d think, ‘Let’s do something based
on William Blake’s painting, The Ghost
of a Flea.’ That could be very self-
indulgent,” he says. “But it could only
exist on telly. Doing stand-up, you’re

edited by the audience. If you take too mad a line, you’ll lose people. But on the
other hand, if something is getting big laughs, it’ll never leave the show.”
Noel, who is hopeful that he and Julian will one day find the time to make a long-
planned Mighty Boosh movie, continues that, “There are certain things that you
just know will work. At one point, I play a herbal tea bag. I knew that would strike
a chord because everyone has tea. The Chicken Man was more of a gamble, but
people really seem to like him. They’re also really enjoying a section where Tom
plays Antonio Banderas and Michael plays Hawkeye, the living embodiment of the
tennis line judge. It’s great to think up these ideas and then watch them take flight.”
The comedian attempts to sum up the style of the show saying, “It’s so abstract. It’s
like you turn the radio dial, and something random comes on. You’re not quite sure
what it is, but you warm to it.”
The only drawback about touring as far as Noel is concerned is that, “You’re buzzing
with adrenaline when you come off stage. You have to do something with that, and
it’s very hard not to go and get drunk. In the old days, we’d give the Rolling Stones a
run for their money with our after-show behaviour. But now I’m in my forties, I have
to find new ways to calm myself down. Like Mick Jagger, I’ll have to get fit. After the
show, Michael and I used to go drinking. This time we’ll have to go to mazes and
local markets and drink peppermint tea.”
Unable to resist one last gag, Noel concludes, “It’s the Peppermint Tea Tour. I should
have called it that!”

Bulger’s relationship with the FBI as an
informant, which he used to eradicate
the Italian mafia breaching his turf.

THINKING OUT OF THE BOX
Motoring Guru Danny Cobbs test drives the powerful new Porsche Boxster Spyder
and enjoys the pure driving experience of this affordable sports car

or far too long the Boxster was considered a
pastiche; a dumbed-down Porsche built to a sell
to the masses and devoid of any sense of its own
identity. Conversely, the new Boxster Spyder
represents something thrillingly new. It’s relevant,
contemporary and seductive, and probably the prettiest car
Porsche has built in decades.
It delivers some noticeable performance figures too, thanks
in part to its 3.8-litre engine - the same found in the current
911 Carrera S. Driven in a straight line and the Spyder
will trounce over many of its rivals, yet it’s far more than
just a quick car. What makes this Boxster so impressive is
not the fact it takes a mere 4.5 seconds to reach 62mph,
or that it’s more than happy to cruise along the autobahn
at 180mph. Obviously they all help. What makes this two-
seater convertible so special is the way it takes 370bhp of
power and then turns it into speed.

MOTORS
By removing anything deemed
unnecessary and using lightweight
materials in its construction, Porsche have
shaved 30kgs off the weight of a regular
Boxster. Now, with a greater power-to-
weight ratio, wider rear wheels, a lowered
sports suspension and a mechanical
differential, it becomes amazingly precise
and surefooted with an unyielding and
endless enthusiasm to please.
Streamliner’s behind the headrests – a
stylisation which evokes the Porsches’ of a
bygone age – transform this version into an
easily recognisable and instantly different
car from the one it’s been based upon.
Unlike its predecessor, this Boxster looks
equally as good with its hood up as it
does down. Lowering the Spyder’s roof
does require a little bit more effort than
just pushing the centre console release
button. To begin with, none of it can be
done from inside the car, so you need to
get out, then detach the end ‘fins’, open
the rear deck, stow the hood, before
finally closing the cover flaps. It’s actually
a lot faster and less complicated than it
first sounds.
The basic package costs £60,495,
which includes a six-speed manual
transmission, race derived carbon-
shell seats and Porsche’s Sports Chrono
package. And although you don’t now
get air conditioning or an audio system as
standard – far too heavy for this car – they
are both available from the options list.
Put simply; this Boxster is sleek, slick and
full of intent and succinctly demonstrates
the difference between nearly good and
really good.

Ed’s letter Christmas and New Year are often a time of mixed blessings. There’s the fun of Christmas, and the stress of Christmas. And long dark afternoons but sparkling crisp mornings. It’s often a time of change or upheaval and the additional pressure can bring crises to a head; but it’s also a time for celebration, renewal and repositioning. This issue of Title represents some of the magic and regeneration that this time of year brings, and looks at the positive changes that can be made going forward with our wellness special, exploring ways to improve mind, body and even soul. There’s also a chance to detox your finances, or retox with decadent food and drink! And loads more besides. You can see all that in the contents list. But we also pause for a minute to look back over the past year – our first year of existence – and celebrate some of our favourite moments. From the start we made a decision that after every six issues of Title Sussex we would take the design, content and styling and give the magazine a shake- up. Our goal was always to create something different from our competitors and we’ve unquestionably done that. But predictably we’ve seen some copycat behaviour creeping in. Whilst we’re flattered – after all, imitation is the sincerest form of flattery – we knew this might happen so for us it’s important to keep staying ahead. This is the last issue of the magazine you will see in this format. From Issue 7 we have some big changes coming, as well as some new publications and a website restyle. We’re really excited about it! The next issue will be the Love & Weddings special, and we’re working on it already. I got rather lost but eventually found somewhere to pull up, I think near Cowfold. Walking along the edge of a field, I turned a corner and was amazed to find this breath-taking view. The 1915 shop ledger was found bricked up in a jeweller’s wall in Brighton’s East Street in 1988 by her father, but having taken it home, they apparently suffered a number of spirit visitations. Apparitions appeared, including a group of men, woman and children, and a soldier with a horse. Josephine says that one of the spirits told her the ledger must be returned to Brighton for the centenary of its first entry – prompting a call to the city’s spookiest site, Preston Manor. Marcus AbelThe Aspirational Luddite Photo: Noelle Douglas “You’re late, where have you been?” comes the high pitch yell from above. “Don’t blame me; it’s the bloody buses.” I reply, closing the door carefully behind me so as not to dislodge the flashing wreath. “I was at the bus stop and the orange lettering said the no. 7 was a minute away, I could see that it was only 100 metres further down North street. I watched it crawl towards me over the next 20 minutes while the sign said due.” “You’ll be pleased to hear I’ve virtually sorted out Christmas online - tree, food, presents and animated reindeer.” Says the wife, smiling broadly. “What, like Bambi?” I say. “Sort of. We need to go down the phone shop now – I need to show you something.” She orders. The boy in the shop gets out this smart phone and starts talking in tongues – something that seems to excite the other half. “Bit big isn’t it?” I enquire. “That’s what everyone wants now.” The boy replies. “I thought technological progress was making everything smaller.” I say. I get looked at disapprovingly twice. “Look it takes moving pictures – look at those waves darling,” says the wife. “You mean videos”, I say. “No,” says the boy laughing. “These are animated, they are moving pictures.” “I believe that’s what they said about the first films of the late nineteenth century.” I retort. I had a pay-as-you-go mobile thrust into my hand some years ago. We were off to Cyril’s 50th in Malaga. I had refused to fly and instead took the leisurely night trains to the destination. It also gave me the perfect opportunity to stop off in Madrid and see my old friend Jasper on the way back. The phone would at least come in handy to ring him when I arrived. Apparently it would also come in handy so the wife could monitor my progress and arrange meeting me at the other end - even though I had supplied her with the full set of Spanish train timetables. Instead I received a list of jobs that I needed to do on my return, all manner of gripes about having to travel on one’s own and a text to say she couldn’t meet me at the station. The fact that I had taken two days to get there prompted much jovial banter at Cyril’s villa. As I left two days later the phone was buzzing. That unpronounceable Icelandic volcano had blown its top. Every guest was now ringing me about how to get back to Blighty – as though I was running an eco travel agency. When I arrived in Madrid I phoned Jasper only to be told by some computerised voice that I had insufficient funds to make the call but I could top up by ringing this number and using my credit card. I did as the computer asked – only to be met by the same message. The phone went in the bin outside the nearby phone box. Now it seemed the wife thought it time for me to re-enter the mobile generation this Saturnalia. “I’m not sure I’m ready for another phone.” I say. “It’s not for you, you’re buying it for me”, she exhorts. “Oh.” I say relieved and feeling for my wallet. “Can I get tinder on it.” She says.   • 28. We’ve had some amazing experiences working on our fashion shoots but working at Gun Hill Studios was something we were all properly excited about. Located in deepest East Sussex, it’s got the largest infinity cove in the whole of the south east and has not one, but two massive turntables based in the floor. It’s used a lot for photographing amazing cars and bikes (there was a beautiful Harley still propped up by the wall when we got there!) but we loved the look for creating a sense of space without boundaries. For those of you who don’t know what an infinity curve is, it’s a studio with curved edges so that you cannot see where the walls are, basically. And it’s very disconcerting to stand in – you lose all sense of perspective! We had a much bigger team on hand this time, including Ruby the pug who completely fell in love with designer Isaac Raymond and hair stylist Yo. Not sure the studio team Emma and Rupert have ever had a pug as part of a production team but hey, we like to be there with the firsts. Setting up the lighting took ages – you can see from the photos what the actual cove looks like and it takes very careful lighting. We dubbed photography team Erika and Matt the lighting geeks but it was fantastic watching all the technology come together. We also had enormous fun playing with coloured gels and smoke machines. We wanted to create an ethereal winter wonderland feel to the images. The clothing sourced for this shoot from all the designers and creatives was amazing. Lindsay Hills brought in some stunning pieces and we had tons of beautiful hair pins, floating feathers and magical looks from all across Sussex. Models Iona and Charlotte looked absolutely extraordinary. But it was the stylists Charlene (makeup) and Yo (hair) who had the biggest fun I reckon. Normally we give them a specific brief for a shoot, and they have limitations, but for this one we told them to go crazy, and they totally did! Hair pieces, crazy eyelashes, sequins, silver tattoos – you name it, they stuck them on! And the result was just fantastic – whimsical, creative and fanciful. A magical fairyland look complete with just a good old kick of sass. Finally, where would we be without our runners?! Lili and Sander worked really hard all day, running around, helping, and even walking the dog. And the results? Well we think it’s our most insane, fun, crazy shoot to date and I have no idea how we’re going to top this!   • 32. THE NEED FOR TWEED…. Wearing a suit really doesn’t have to be a formal thing, and I am a great fan of tweed. It can be dressed up or dressed down to suit the occasion – be it work or play. You could even take your dog out for a walk wearing it! It’s also excellent for wearing as separates – just the trousers, just the jacket, or waistcoat on its own. So what is tweed? Tweed is typically described as a rough woollen cloth, typically made of mixed flecked colours, originally produced in Scotland. There are many different variations of cloth that fall under the umbrella of ‘tweed’ for example; Donegal, Harris, Cheviot and Saxony. Tweeds have advanced over the years and there are many distinctions of twill weaves available now, including herringbones, chevrons, checks of all sizes, marls, and flecks; all available in pretty much any colour you desire. The majority of tweeds are made with pre-dyed yarns, but there is also the option of piece dying batches of tweeds. Fabric production has evolved massively, great for us tailors as it means we can offer cloths in a wide variety of colours and weights. Marvellously, one of this season’s hottest trends is tweed. A CUT ABOVE THE REST Fal Blake is one half of Gresham Blake, the famous menswear store in Bond Street, Brighton, where the design has a strong signature - lots of use of colour and edgy design - and the clothes come ready to wear or made to measure. Each month Fal introduces us to one of the many fascinating people to come through the store’s doors… Fal Blake Photo: Kenny McCracken This month I would like to introduce you to the very enigmatic Marc Abrahams. I first met Marc around 12 years ago when we were both competing against each other in The Brighton Business Awards. When I was first introduced to Marc, I was quite taken aback. During my childhood I always considered that a doctor was one the most intelligent occupations to aspire to. However, being a vet, and a master of so many species, is an even more difficult career pathway to achieve. And on the flip side, with all that education, these people can get a little nerdy. But here is a man that is charming, exuberates confidence and is a VET! A rock star of a vet! Marc Abrahams is not only a rock star of a vet; he’s also one that has been recently named ‘Vet of the Year 2015’. He’s also a keen animal welfare campaigner and often puts himself forward to speak for the animals. You’ve probably seen Marc in various TV shows (Paul O’Grady, This Morning) but he also runs a campaign to end Puppy Farm Cruelty. Puppy farming is the mass commercial production of puppies in horrific conditions, sold via pet shops, garden centres, online and in many free newspaper advertisements. These puppies, commonly riddled with incurable diseases often become seriously ill shortly after arriving in their new homes, their mothers still stuck hundreds of miles away in squalid conditions. Two years ago, Marc took his campaign to Westminster. Numerous high profile celebrities, including comedian Ricky Gervais, musician Brian May and actor Peter Egan support his ‘Pup Aid Campaign’. We like to think of Marc as the leader of a rebellious campaign, the animal welfare mafia. This is where our partnership with Marc really takes to its own. We help Marc come across as hardworking, intelligent, confident and driven in pure rebellious style. Choosing the clothing to represent that is always a fantastic challenge for us. Marc is not a fan of formal wear. Who says that you have to wear a plain and official looking suit when addressing Parliament, why does it have to be formal? We love the thought that he uses our anarchic take on tailoring to help push his campaigns through. Marc’s message is simple. “When choosing a dog, prospective dog owners should always consider adopting from a reputable shelter. Or, if looking to buy a pup contact the Kennel Club for their list of responsible assured breeders where puppy and mother will always be seen interacting with each other. By adhering to these rules, it’s extremely difficult to end up with a sick pup – and better still this cruel industry will be starved out of business!” I support Marc’s campaign 100%!   • 37. Before Tony Style: Everyday/casual On the day of the shoot: Firstly, Tony’s beard was cut down with beard clippers in order to tidy and remove unwanted long and stray hair. We then shaped and sharpened around his jaw, mouth and cheeks in order to create definition throughout his beard, this is best achieved by following the natural flow of the beard. Tips and Tools: Using a small pair of beard clippers with a range of guards that is adequate to the desirable length of the beard. A beard balm and comb to soften and smooth facial hair.
  • 38. TONY’S GROOMING “I would normally start the day with a shower and wash my face with Bull Dog original face wash or face scrub. I also use their moisturiser afterwards. On my hair I wash with Goldwell Dualsenses Man Thickening shampoo. I dry my hair with KMS hair play (salt spray) and then style with the dry wax spray or a thickening powder.” How much do you spend per month on your grooming? “Per month I would normally spend about £30 on haircuts and £10-£20 on products.” What do you do now that you wouldn’t have dreamed of doing five years ago? “I tend to use more than one product on my hair and face to get the results I want. I was given some great advice from my hairdresser Jenny Brown. She works here at Cove and was the one who advised me on what to use to get the results I wanted. Five years ago I would have used far too much product. It’s about working out what’s best for your hair and skin type.” Is grooming for hipsters, or the hip? “I would say it’s for everyone. Everyone should take pride in their appearance. Why would you not want to feel good about yourself?” Tony’s top tips “Best advice I could give would probably be to just stick with the same products if they are working well for you. I have quite thin hair so constant use of the Goldwell shampoo is giving me the best results.” After Before NICK Style: Modern British gentleman On the day of the shoot: We wet- shaved Nick leaving his moustache, using a generous amount of beard and moustache wax to style it into the handlebar. Tips and Tools: I used a small, fine comb and strong wax as facial hair is usually very coarse and needs something tough to give it a firm hold! The products I used in the shoot were from The Brighton Beard Company.
  • 39. After NICK’S GROOMING “I try to visit a barber for a wet shave at least twice a week as I enjoy the relaxation time. On other days, I shave myself with a shaving bowl and brush rather than foam. The brush helps to lift and soften the beard and the soap is kinder to the skin. On a normal day, I will lightly wax my moustache into a well kempt walrus, moisturise my face and comb my hair. On more formal occasions, I will heavily wax my moustache into a sculpted handlebar with the ends curled upwards, moisturise my face and style my hair with product. At night, I wash my moustache with Pears Soap. My family have always used Pears, so its smell has good associations for me. Also, it’s not harsh so keeps my moustache feeling soft. Then moisturise again.” How much do you spend per month on your grooming? “£120” What do you do now that you wouldn’t have dreamed of doing five years ago? “Moisturise.” Is grooming for hipsters, or the hip? “Grooming is for anyone who cares about their appearance and wants to look their best.” Nick’s top tip “Always carry moustache wax in case you need to retouch your ’tache in emergencies. I keep mine in my trouser pocket so it’s at body temperature.”

Before HARRY Style: Well groomed On the day of the shoot: We wet-shaved Harry with a classic cut throat razor using a high quality shaving gel and a sharp blade in order to give him a close shave and a smooth finish. I finished the shave with a post shave balm for sensitive skin to avoid irritation. Tips and Tools: Use plenty of warm water or a hot flannel to soften bristles. Good quality shave gel, a fresh blade every time a shave is commenced, follow the grain of the hair, rinse razor often in hot water, and post shave balm in order moisturise and cool the skin following a shave.
  • 41. After HARRY’S GROOMING “First thing I usually shave and that can be anything from a touch up around my neck line to a change of facial hairstyle. Up until recently I had a fairly large beard that still involved daily upkeep. I find it weird that some guys don’t buy conditioner or face wash, not only just because I find my hair easier to style after conditioning but because it makes for healthier hair. My dad had already started balding at my age so perhaps that’s got me worried! Before I went clean shaven recently I’d use beard oil after towel drying my beard, then I’ll put some mousse in my hair and blow-dry into shape. I’ve always found my hair hard to style due to it being very fine and straight so I use a combination of a little heavy matte clay and finish up with some weaker hairspray. I’ve tried to moisturise my face after showering every day since I was about 15. I have my mum to thank for that!” How much do you spend per month on your grooming? “Roughly £20-£30.” Is grooming for hipsters, or the hip? “Grooming is important for hygiene and it makes me more confident. I learnt a lot of this stuff from my parents though so I’ve never seen it as much of a hipster trait.“ Harry’s top tip “For my fine hair I like applying a tiny amount of dry shampoo after drying. It makes my hair more receptive to styling and in combination with some volumizing powder or hairspray will look good throughout the day.” TIPS FROM CHYRESE Men’s hair and fashion has always been an interest of mine. I feel as though male grooming has grown and become extremely popular in recent years and I love all aspects of hair dressing, but the traditional wet shave has always really interested me as it is unlike anything I’ve done before. I believe there’s a gap in the market for pampering services for men; a traditional wet shave is perfect as it’s both relaxing and luxurious. I wanted to bring something unique to Cove in order to expand what we can offer our clients. Being a woman, I was definitely very excited when I jumped into this role as I knew that not many women train and offer traditional wet shaves. My Predictions In 2016 I see men moving on from the big bushy beards and on to shorter beards or stubble, and more of the clean shaven look.

T here are many ways to relax, some curl up in front of the TV with a glass of wine,others enjoy a leisurely jog, but now more and more people are floating around naked in pitch-black salt tanks after a stressful day at work. And that’s exactly how I spent one Monday evening. Calm and relaxation for me are taboo terms, I’ve got the energy of a nine- year-old and total silence is my idea of hell. However, when I was offered a total sensory deprivation experience at The Float Spa in Hove I jumped at the chance. My knowledge of Floatation Therapy is as vast as the pod I would squeeze myself into, so I was understandably nervous. Those nerves were instantly dashed after a smiling welcome from Camille, the owner of the Spa, and Natalie, who was to become my salt slumber supervisor for the evening. With complimentary cucumber water in hand I was given a quick tour of the facilities and then it was go time. Natalie showed me to a white room with a table, shower and what was essentially a white whale. She proceeded to open its ‘mouth’ to reveal the salty abyss and purple mood lighting contained within. She then told me the dos and don’ts of ‘Floatation’. And I was able to ask the three questions on all of our lips: 1. Is the water cleaned after every float? 2. Will it hurt if the water gets in your eyes? 3. Can I go in naked? Camille had already informed me that all I had to bring with me was myself and a hairbrush. Needless to say, the answer was yes to each of those questions. My clothes were off, the lid was shut and Float hard or float home by Rob Jones ocean sounds surrounded me. There are two lighting settings inside the pod, on or off. I opted for off because I wanted to completely submerse myself into the sensory deprivation side of the experience; it was float hard or float home. Unfortunately while trying to relax I splashed some of the salt water into my eye. I then scrambled around spraying myself in the face with spring water to sooth my aching peepers. After that incident I did my best to re- relax and empty my mind of worries and thought. As you lay there listening to your heartbeat slow down you relax into the experience, you begin to realize why people do this. There are no distractions in the pod, nothing to fear, other than an eyeful of salt water. I didn’t get the urge to check my iPhone or pick at some cheese in the fridge. The experience felt like both hours and minutes, you have no sense of time or space in there. After easing my way out of the water I had a shower, made sure I put my clothes back on and headed back out to the reception. There Natalie greeted me with a warm pot of herbal tea and a delicious jar of homemade sorbet. I can honestly tell you at that moment I couldn’t have felt more zen. I’m completely converted. Skeptical at first about how an expensive salt bath could cure what ails me, I now completely understand the new found demand for floatation. It’s something that you’ve never experienced before and what I believe to be the closest you’ll get to an out of body experience, without huffing paint thinner. All in all I give the experience a solid 10/10 and I will absolutely be returning in the future. My only regret: forgetting to bring my hairbrush.   • 49. It’s paved with good intentions, we know, and there’s a good chance Chris Rea might be on it. We also know that like Oscar Wilde said, we can resist anything except temptation. BUT we are going to try and get a bit healthier and less frazzled for 2016 and this is where it starts… WELLNESS OR THE ROAD TO HELL Eat better This is NOT the time of year for a big diet. It’s winter and your body needs fuel. But it needs the right fuel so instead of binge dieting after the crazy season and sending your body into total shock, treat it kindly. Eat lots of fresh fruit and veg, lean protein like chicken, fish or beans, and good carbs. C’mon people, you know what to do. Get rid of the rest of the mince pies and either drink that brandy or chuck it out. Wine? A glass of red now and again is fine, but you don’t need the whole bottle, followed by another bottle, then a row of shots and some mescal for the cab ride home, do you? Make small changes, eat better oils, chow down on some nuts and just do a better job, OK? Relax Yeah, you heard us. Take time to relax – and no, that doesn’t mean more time in front of the TV or Xbox. How about a little yoga or meditation? Take time out to unwind in a hot bath. There’s something just wonderful about dropping gently into scented hot water and laying back with a big fat sigh. Exercise more Not rocket science, is it. Factor in some time for a bit more exercise but like with the food, don’t go crazy straight after Christmas, and you’ll feel a lot better. If you go at this all gung-ho you will send your body into shock and you’ll never keep it up. Then you’ll hate yourself for being flaky, so make sustainable changes.Walk more. Swim once a week. Go to the gym but not every day. Take the stairs. And go for a walk outside without staring at your phone at least once a week. See the beauty of nature! This little piggy went to Market Sam Harrington-Lowe went to investigate the brave new world of Market in Hove W hen I heard that Graze in Hove was having a refurb and total makeover I was a bit unsettled. I’m a bit like a child sometimes in that I don’t really like change, and there was something about that place that brought back happy memories of eating in Soho in the ‘eighties, tucked away in sumptuous dark hidey-holes with exceptional table linen and extravagant food, and an even more extravagant wine list. But I’m very happy to report that I needn’t have worried. In fact, what has replaced the old guard is a thriving, buzzing, eating environment that feels simultaneously European and British, and where the service is good enough to feel a bit upmarket, but the dining experience is relaxed and informal. Gone are the dark corners and set tables, replaced by long Spanish-style counter dining, and a handful of tables scattered around. True to their roots, Kate and Manni have stuck to the tapas style food that made their name, but it’s been jazzed up considerably, much like the décor. We went on a Tuesday night and it was rammed, which is always a good sign, and the place was filled with a real range of people – from gorgeous single girls doing a bit of work at laptops, to groups of friends joyfully wading through piles of food and wine. I loved sitting up at the counter and sticking my beak into everything the staff are up to (I expect they love customers like me). But I like to watch my food being prepared, or ask questions about wines or dishes as the team are bustling about. It makes me feel involved. The staff on hand are all pretty knowledgeable about the menu, and I love that. Is there a more annoying phrase in the lexicon of dining language than, “Oh I’m not sure; hold on, I’ll have to ask chef”? I want to think that the people who work together know what the hell each other is doing, and that includes whether or not there’s black pudding with the scallops, or whether there’s shrimp in the fish stock. Call me picky. But I’m very pleased to report that at Market, the left hand very much knows what the right hand is doing. The food was all lovely. There were so many little dishes I can’t go through it all individually without rambling on like www.titlesussex.co.uk60

Things that really stood out for me were the goat’s cheese churros with gooey sweet truffled honey (an inspired dish of decadent sumptuousness), the octopus, which was fresh and firm and not all wobbly, which I can’t stand. The polenta balls were sticky and satisfying, but I’d approach those with respect if you are planning to order a few different things as they’re properly filling, and the truffled macaroni cheese, which was just sexy as hell. Slightly disappointed in the brownie – the flavours were amazing but it was a little dry, a touch overcooked. But hey; the place was heaving so we can forgive them that, and honestly, the cheese board more than made up for it. Get yourself to Market. I expect you should probably book, if they take bookings. Take your time, and take in a few different dishes. And take a good friend. They’ll thank you for it. NICK MOSLEY Nick Mosley can be found tweeting @BrightonNick Photos: Julia Claxton FOOD & DRINK A CHANGE IS GOING TO COME TIME TO WINE I’m always keeping an eye on wine trends – in a purely professional capacity, of course – and with Prowein, the world’s biggest wine exhibition, in Dusseldorf this spring, I asked my mates Henry and Cassie at Butler’s Wine Cellar what wines I should be hunting down. Henry’s top tip for 2016 is to keep an eye out for wines from Piedmont in Italy, which you’ll be familiar with as hearty Barolo and Barbera reds. The vintages coming out of Piedmont are getting better and better, so Rioja better watch out as the current red wine trend of choice. In other booze news, Henry reckons that Chardonnay will be cool again with consumers. The heavy oak that we associate with the Chardonnay grape is all the fault of New World producers in the 1990s. It’s a tremendously versatile grape and if you’re drinking white Burgundy, Chablis or Champagne then you’re most likely drinking Chardonnay grapes. Last year we collectively won the accolade of Best Food City in the Condé Nast Traveller reader’s food awards and our independent restaurant and cocktail scene continues to go from strength-to-strength. Thankfully, it finally looks like the civic embarrassment of the derelict Madeira Terraces will find resolve with London’s Soho House achieving planning permission (fingers-crossed) for a members bar and lounge, three funky restaurants and a seafood venture with the very talented Ben McKellar of Brighton’s the Gingerman group. The West Country’s Harbour Hotels group have purchased the seafront UMI on the junction of West Street and Kings Road with a complete refurbishment in early 2016, Starwood Hotels are due to open their incredibly cool ALOFT concept hotel behind Brighton station, whilst Jury’s Inn takes over the former Thistle Hotel on the seafront with significant investment. Meanwhile the Hotel du Vin group have taken over Seattle at Brighton Marina which will shortly be re-launching under their Malmaison brand. We’ll be back with the Big Sussex Market on New Road and the Rockinghorse Children’s Easter Egg Hunt in Pavilion Gardens.   • 65. Cocktail of the Month Food news The VerdiTa With the festivities and excess of the holiday season taking their toll, many people choose to go on a detox/gym mission. As with all things, moderation is the best policy. So we firmly believe that it’s quality-over-quantity policy that potential do-gooders should adopt rather than a blanket ban. Saying that, we do have an amazing non- alcoholic ‘mocktail’ that can be turned into a proper cocktail very quickly and this is a heady mix of fresh botanicals, pineapple juice and fresh chilli. It can be as hot as you like! To jazz it the hell up, simply serve with a shot of good 100% agave tequila on the side and take alternating sips.   • 67. For an excellent cleanse and for feeling clean inside and out, we are loving this fresh-tasting, light soup. It’s also a stunningly low 206 calories per serving. In this vegetarian soup, the barley takes centre stage. This grain is a good home remedy for water retention so this soup is perfect for when you feel bloated. SERVES 2 600ml vegetable stock (see below) 1 lemongrass stalk, bashed 80g pearl barley 1 small cucumber, deseeded and sliced 3 spring onions, chopped, 1 green chilli, thinly sliced 1 tbsp tamari wheat-free soy sauce fresh root ginger, peeled and thinly sliced, to serve Bring the stock to the boil in a pan and reduce the heat to a good simmer. Add the lemongrass and pearl barley. Cover, leaving a bit of a gap between the lid and pan so the stock doesn’t boil over. Once the barley is tender, about 45 minutes, take the pan off the heat and remove the lemongrass. Stir in the cucumber, spring onions, chilli and tamari. Serve with fresh ginger slices scattered over. VEGETABLE STOCK This makes quite a delicate, aromatic white vegetable stock; perfect for the cleanse recipes. MAKES 1 LITRE 1 leek, roughly chopped 1 white onion, roughly chopped 1/4 celeriac, roughly chopped 1 celery, roughly chopped 1 fennel, roughly chopped 6 garlic cloves, bashed 1 tsp coriander seeds Sea salt flakes A handful of soft herbs – such as dill, coriander, tarragon Add all the chopped vegetables to a large pot, along with the garlic, coriander seeds and a little salt and cover with about 1.2 litres of water. Bring to the boil, then reduce the heat to a good simmer and cook for 45 minutes until all the vegetables have softened. Switch off the heat and add your preferred soft herbs, then leave to rest for an hour or so before straining through a sieve lined with muslin or cheesecloth, discarding all the solids. Transfer the stock to an airtight container. TAKES 35 MINUTES • SERVES 4 1 litre/1¾ pints low-salt chicken stock 2 tsp Thai red curry paste 100g/4oz flat rice noodles 150g pack shiitake mushrooms, sliced 125g pack baby corn, sliced 2 skinless salmon fillets, sliced Juice of 2 limes 1 tbsp reduced-salt soy sauce Pinch of brown sugar Small bunch of coriander, chopped Pour the stock into a large pan, bring to the boil, then stir in the curry paste. Add the noodles and cook for 8 minutes. Tip in the mushrooms and corn, and cook for 2 minutes more. Add the salmon to the pan and cook for 3 minutes or until cooked through. Remove from the heat and stir in the lime juice, soy sauce and a pinch of sugar. Ladle into four bowls and sprinkle over the coriander just before serving. Cook the garlic forafewseconds,thenaddthecourgettes and cook for three minutes until they start to soften. Stir in the peas and cannellini beans, pour on the hot stock and cook for a further three minutes. Stir the pesto through the soup with some seasoning, then ladle into bowls and serve with crusty brown bread. ComedianNoelFieldingvisitedSussexinDecember and James Rampton sat down with the alternative stand-up to find out about his new show and what it’s like to be back on stage after an extended break N oel Fielding stepped onto the Brighton Dome stage in December mid-way through his his first solo tour for five years. The comedian who, thanks to his work on The Mighty Boosh, Noel Fielding’s Luxury Comedy and Never Mind the Buzzcocks, has an enormously loyal following, was performing his new show, simply titled, “An Evening with Noel Fielding.” Featuring Noel’s inimitable blend of stand-up, animation, music and appearances by some of his best-loved characters, including The Moon, The Dark Side of the Moon and Fantasy Man, it was a blinding show. Noel and I are chatting in his north London studio. Surrounded by props – including life-size cardboard cut-outs of a robber with a stripy jumper and a swag bag and a nun wielding a huge gun – and his own arresting paintings, he makes for marvellously entertaining company. It is a delight to spend an hour in the company of this hilarious and magnetic comedian. The five years away from the live arena only whetted Noel’s appetite for stand- up. The performer, who has spent the last few years occupied by the meticulously produced, semi-animated E4 show, Noel Fielding’s Luxury Comedy, begins by underlining that nothing beats the rush generated by live work. “The problem with TV is that it takes years to make and after a while you can’t remember what it’s like to tell a joke and get a laugh from it,” he explains. “The great thing about live comedy is that it cuts out the middle men - all those TV producers and directors. It takes out everything that gets in the way, so it’s just you and the audience. It’s a really pure set-up.” Because it’s so deeply original and innovative, Noel’s comedy can divide people. But he thinks that the infectious nature of his stand-up show can help to win over the agnostics. “Some people might think they’re allergic to you, but if they come to a live show and see everyone is laughing, it’s hard to say that it’s not funny. It was the same with the Boosh. Sceptics were convinced when they came to our shows. As a stand-up, you spend all day being nervous. But as soon as you step onto the stage and get the first laugh, it’s magic time. It’s like being in a dream. It’s a real buzz.” The comedian, who was joined on stage by the loose stylings of his brother Michael Fielding (best known as Naboo and Smooth from The Mighty Boosh) and the physical lunacy of Tom Meeten (who plays Andy Warhol in Noel Fielding’s Luxury Comedy), explains exactly what his show was all about. “The first half is set in a cabaret club,” he reveals. “Then I get kidnapped from my own show, and in the second half the rest of the characters have to find me. I play other characters during the second half. It becomes like a play. It’s a sort of farce.” The evening also featured music that Noel had composed with Serge Pizzorno from Kasabian and some characteristically entrancing stand- up routines. Noel, who for many years performed with his close friend Julian Barratt in The Mighty Boosh, dubbed “The funniest comedy double act in Britain” by the NME, explains some of the themes he addressed in the show. “I touch on turning 40 and my Peter Pan complex. Because I’m now 40, I try to do a bleak bit, but of course it soon becomes completely fantastical. I attempt to go gritty, but I can’t help going fantasy.” As an example, Noel says he has been working up the character of Chicken Man. “He’s like a figure from a Jodorowsky Spaghetti Western. He’s half man, half chicken. He has to fight a bandit, and he’s got Tourette’s. He’s like a cross between A Streetcar Named Desire and Foghorn Leghorn. He keeps flipping in and out of madness.” Noel’s comedy is always richly imaginative, but can he tell if he’s gone too far? “No!” laughs the comedian,who has also acted in The IT Crowd, Nathan Barley and Garth Marenghi’s Darkplace. “Locked away in North London for years making Noel Fielding’s Luxury Comedy, we’d think, ‘Let’s do something based on William Blake’s painting, The Ghost of a Flea.’ That could be very self- indulgent,” he says. “But it could only exist on telly. But on the other hand, if something is getting big laughs, it’ll never leave the show.” Noel, who is hopeful that he and Julian will one day find the time to make a long- planned Mighty Boosh movie, continues that, “There are certain things that you just know will work. At one point, I play a herbal tea bag. I knew that would strike a chord because everyone has tea. The Chicken Man was more of a gamble, but people really seem to like him. They’re also really enjoying a section where Tom plays Antonio Banderas and Michael plays Hawkeye, the living embodiment of the tennis line judge. It’s great to think up these ideas and then watch them take flight.” The comedian attempts to sum up the style of the show saying, “It’s so abstract. It’s like you turn the radio dial, and something random comes on. You’re not quite sure what it is, but you warm to it.” The only drawback about touring as far as Noel is concerned is that, “You’re buzzing with adrenaline when you come off stage. You have to do something with that, and it’s very hard not to go and get drunk. In the old days, we’d give the Rolling Stones a run for their money with our after-show behaviour. But now I’m in my forties, I have to find new ways to calm myself down. Like Mick Jagger, I’ll have to get fit. After the show, Michael and I used to go drinking. This time we’ll have to go to mazes and local markets and drink peppermint tea.” Unable to resist one last gag, Noel concludes, “It’s the Peppermint Tea Tour. Carol is a spellbinding romance that holds the audience in a state of anxiety, much like those first moments with a partner. Director Todd Haynes has done a terrific job as we the audience, like Therese, become intrigued with Carol.The film is without a doubt one of the best of 2015 and is subtle, beautiful and enticing. After showing his unique medical abilities he is saved by Victor (James McAvoy), and the two join forces to try and create life out of nothing, before Igor begins to question their creation. The film is incarcerated with sub-plots that act only to digress from the actual storyline, creating a confusing, misdirected final product. Director: Paul McGuigan Release Date: 3 December BLACK MASS Based on a true story, Black Mass focuses on the infamous James ‘Whitey’ Bulger, and how he rose from small time to kingpin. The brother of a senator, ‘Whitey’ (Johnny Depp) terrorised South Boston for years with his gang, running drugs, kidnapping and racketeering. The story focuses on Bulger’s relationship with the FBI as an informant, which he used to eradicate the Italian mafia breaching his turf. THINKING OUT OF THE BOX Motoring Guru Danny Cobbs test drives the powerful new Porsche Boxster Spyder and enjoys the pure driving experience of this affordable sports car F or far too long the Boxster was considered a pastiche; a dumbed-down Porsche built to a sell to the masses and devoid of any sense of its own identity. Conversely, the new Boxster Spyder represents something thrillingly new. It’s relevant, contemporary and seductive, and probably the prettiest car Porsche has built in decades. It delivers some noticeable performance figures too, thanks in part to its 3.8-litre engine - the same found in the current 911 Carrera S. Driven in a straight line and the Spyder will trounce over many of its rivals, yet it’s far more than just a quick car. What makes this Boxster so impressive is not the fact it takes a mere 4.5 seconds to reach 62mph, or that it’s more than happy to cruise along the autobahn at 180mph. Obviously they all help.   • 77. The new Boxster Spyder represents something thrillingly new. It’s relevant, contemporary and seductive, and probably the prettiest car Porsche has built in decades. MOTORS By removing anything deemed unnecessary and using lightweight materials in its construction, Porsche have shaved 30kgs off the weight of a regular Boxster. Now, with a greater power-to- weight ratio, wider rear wheels, a lowered sports suspension and a mechanical differential, it becomes amazingly precise and surefooted with an unyielding and endless enthusiasm to please. Streamliner’s behind the headrests – a stylisation which evokes the Porsches’ of a bygone age – transform this version into an easily recognisable and instantly different car from the one it’s been based upon. Unlike its predecessor, this Boxster looks equally as good with its hood up as it does down. Lowering the Spyder’s roof does require a little bit more effort than just pushing the centre console release button. To begin with, none of it can be done from inside the car, so you need to get out, then detach the end ‘fins’, open the rear deck, stow the hood, before finally closing the cover flaps. It’s actually a lot faster and less complicated than it first sounds. The basic package costs £60,495, which includes a six-speed manual transmission, race derived carbon- shell seats and Porsche’s Sports Chrono package. And although you don’t now get air conditioning or an audio system as standard – far too heavy for this car – they are both available from the options list. Put simply; this Boxster is sleek, slick and full of intent and succinctly demonstrates the difference between nearly good and really good.
