• It’s not a main meal and not a side dish. But in Bulgaria people eat it as a main dish for
breakfast, lunch and dinner.
• Guess what it is!
4. SOUP NAMED CHORBA
It is made of tripe, cut into small pieces and boiled in water. Put butter and
flour in a pot and stir to create a thick paste, which needs to redden slightly.
Then add the tripe itself. Boil the soup (chorba) for about 30 minutes. Finally,
thicken the soup by adding eggs beaten with yoghurt.
The more you cook it, the better it will taste!
5. SEASONING
Add mashed garlic, some vinegar, black pepper and
chilly peppers.
Serve it hot with a toast, of course.
It’s delicious, isn’t it?
