Mariko's Eggplant Appetizer is based on a
traditional authentic East Europe recipe of
chopped fresh harvested eggplant and red
bell pepper mixed in white wine vinegar
with combination of unique spice mixture
and greens. Delicious as an ingredient in
salads and sandwiches.
