6. MAKING THE BUTTER
The heavy whipping cream must sit out for
12 hours before we can start to make the
butter.
Pour cream into baby food jar about ¼ to ½
of the way full.
Shake the mixture – about 1 shake per
second.
Once solid butter has formed pour off the
buttermilk and add cold water to the jar.
Swirl water around and drain it off until the
water is clear.
7. FINISHED PRODUCT
The finished product is called SWEET
CREAM BUTTER.
Sweet Cream Butter is equivalent to
grocery store butter.
8. IMPORTANT FACTS
Why do we allow the cream to sit out?
The fat globules form crystals, which
-
helps to break the fat globule membrane
when shaking the jar.
- It also allows lactic acid bacteria to
grow, making the cream more acidic
which prevents the growth of harmful
bacteria.
9. IMPORTANT FACTS
Heavy Whipping Cream - comes from
milk that has been allowed to sit out, the
cream eventually floats to the top.
Why does the cream float to the top?
-The cream contains fat globules which
are lighter than milk, so they float to the
top.
10. IMPORTANT FACTS
What is buttermilk?
- Buttermilk is the thin white liquid
surrounding the butter. This is what
buttermilk biscuits are made from.
11. IMPORTANT FACTS
How fast should the jar be shaken?
- 1 shake per second
Butter is a naturally pale cream
color, it is yellow when you buy it
because the manufacturers dye it
yellow.
