Celebrated Asian Cuisine Chef Milind Sovani spreads his wings in the region
Sets up a consultancy to promote Indian cuisine across the region
Singapore, July 14, 2011:
A celebrated face of Indian cuisine in Singapore and Southeast
Asia, Chef Milind Sovani who is highly regarded for his modern,
high-end Indian cuisine has spread his wings across the region.
Chef Sovani has recently set-up his own consultancy service that
will work cohesively with hospitality groups across the region on:
• Concept Development for a new restaurant in a hotel
• Restaurant Consultancy for an existing restaurant in a
hotel
• Project Set ups
• Product Development
• Research & Development
• Menu Designing
• Kitchen Planning Menu Planning
• Planning and execution of food festivals pertaining to a
menu/theme
• High-end banqueting
Commenting on the same, Chef Sovani said, “My experience in creating and running successful
restaurants in Singapore over the past decade has prompted me to set-up my own consultancy
practice. Through this venture my aim is to be a forerunner in innovating and modernizing Indian food
that challenges people’s perception and expectation of this multifaceted cuisine.”
Chef Sovani is the ‘Official Consultant Chef’ of the Singapore Food Festival 2011, as well as the head
chef for “Spice and Canapés in the Sky”, a programme initiated by Singapore Food Festival,
introducing spices and canapés complemented by the lovely city sights on The Singapore Flyers.
Chef Sovani has also rolled out a hi-end banqueting service in India. This service will offer sit-down
banquets, degustation menus, caterings to summits & conventions in world gourmet summit style and
most importantly, offer Singapore & South East Asian cuisines to Mumbai India, which no one has
done before.
Born in Mumbai, Chef Sovani has always taken the less trodden path as compared to his peers, and
has always achieved much success. Chef Sovani had trained under the finest Indian chefs as well as
under the wings of renowned French Chef Roger Moncorte.
As Chef-Director of award-winning restaurant ‘The Song of India’, he has introduced a new look and
dimension to Indian cuisine in Singapore. Chef Sovani possesses adept knowledge and experience
on the properties and usage of a myriad of spices. This gives him the capability to create dishes
based on Ayurveda principles that promote a holistic and balanced diet through Six Tastes: sweet,
sour, salty, bitter, pungent, and astringent.
2. Not only has he served his creations to the Prime Minister of India and many other international
dignitaries, he has hosted various cooking shows and has written a cookbook-''5 Star Recipes'.
Chef Sovani has also earned multiple awards throughout his stay in Singapore, winning the
'Singapore Chef of the Year 2005', 'Asian Ethnic Chef of the Year, 2005'. Chef Sovani was also one of
the top 3 Asian Chefs in 2004 and 2005 at the World Gourmet Summit and the Gold Medal Winner at
the Gourmet Hunt 2004 and 2005.
Chef Sovani is currently writing a new book which shares his experience, advice and guidance tips
targeted at youths who aspire to be chefs. He is also planning to start a new product range of spice
mixes formulated to create popular Indian dishes within the comfort of one’s home. These mixes are
designed to take the guesswork out of choosing the right spices and its correct portions.
