Chef Sovani had trained under the finest Indian chefs as well asunder the wings of renowned French Chef Roger Moncorte.As Chef-Director of award-winning restaurant ‘The Song of India’, he has introduced a new look anddimension to Indian cuisine in Singapore. Chef Sovani possesses adept knowledge and experienceon the properties and usage of a myriad of spices. This gives him the capability to create dishesbased on Ayurveda principles that promote a holistic and balanced diet through Six Tastes: sweet,sour, salty, bitter, pungent, and astringent.
Not only has he served his creations to the Prime Minister of India and many other internationaldignitaries, he has hosted various cooking shows and has written a cookbook-5 Star Recipes.Chef Sovani has also earned multiple awards throughout his stay in Singapore, winning theSingapore Chef of the Year 2005, Asian Ethnic Chef of the Year, 2005.
