16. Zucchini Bread Recipe:
• 3 eggs beaten
• 1 cup sugar
• 1 cup brown sugar
• 1 cup canola oil
• 1 T vanilla
• 3 cups flour
• 1 T cinnamon
• 1 tsp salt
• 1 tsp baking soda
• ¼ tsp baking powder
• 2 cups peeled and grated zucchini
1. Beat eggs, sugar, brown sugar, vegetable oil and vanilla.
2. Slowly mix in dry ingredients. Blend in grated zucchini.
3. Pour into 2 greased and lightly floured 8’’x4’’ loaf tins.
4. Bake at 325 degrees for 60-70 minutes.
