Physico - Chemical analyses of semi-finished, finished cocoa products and other raw
materials including determination of moisture, ash. Fineness (residue), free fatty acid,
sugar, fat and pH
Microbiological analyses of semi finished and finished cocoa products including Total
Plate Count, Yeast and Mould and Coliforms.
Assessing quality of Raw Cocoa Beans
Conducting routine monitoring of Cocoa beans at the Warehouse.
Liaising with Quality control Division for fogging and fumigation when necessary.
