 Physico - Chemical analyses of semi-finished, finished cocoa products and other raw
materials including determination of moisture, ash. Fineness (residue), free fatty acid,
sugar, fat and pH
 Microbiological analyses of semi finished and finished cocoa products including Total
Plate Count, Yeast and Mould and Coliforms.
 Assessing quality of Raw Cocoa Beans
 Conducting routine monitoring of Cocoa beans at the Warehouse.
 Liaising with Quality control Division for fogging and fumigation when necessary.
