1. Mushroom Processing
With Demo Cooking
Conducted at Southern Luzon State University
Prepared and Presented By:
Alma J. Caringal
and
Sheena Marie C. Arce
2. Overview
Oyster mushrooms have been used for
thousands of years as a culinary and medicinal
ingredient. The white mushrooms resemble
oysters, and can be found growing in the wild on
dead trees or fallen logs. They have a rich history
in traditional Chinese medicine from as early as
3,000 years ago, particularly as a tonic for the
immune system, according to acupuncturist
Christopher Hobbs, author of "Medicinal
Mushrooms."
3. Antioxidant Effects
Oyster mushrooms contain ergothioneine, a
unique antioxidant exclusively produced by
fungi, according to a 2010 study led by Penn
State food scientist Joy Dubost. The study found
that oyster mushrooms have significant
antioxidant properties that protect cells in the
body.
4. Anti-Bacterial Effects
Oyster mushrooms have significant
antibacterial activity, according to a 1997 study
published in the "Journal of Agricultural and
Food Chemistry." The study found that the active
compound benzaldehyde reduces bacterial
levels. It may form on the mushroom as a
reaction to stress.
5. Nutritional Value
Oyster mushrooms contain significant
levels of zinc, iron, potassium, calcium,
phosphorus, vitamin C, folic acid, niacin, and
vitamins B-1 and B-2, B3,B5,B12 and vitamin
D.
7. MAINTAIN THE LEVELS OF BLOOD SUGAR
Vitamin D helps to reduce inflammation and raise the insulin sensitivity.
The studies shows that Vitamin D helps to prevent both type 1 and type 2
diabetes.
8. IMMUNITY SYSTEM
Vitamin D helps to replicate the healthy cells and protects the
autoimmune conditions such as flu and common cold.
9. CARDIOVASCULAR CONDITIONS
Vitamin B3 helps to reduce atherosclerosis that is hardening of arteries
which may lead to the heart disease. Vitamin B3 reduces the chances of
reoccurring of heart disease or cardiac arrest in those who have already
experienced.
10. Skin problems
Vitamin B3 which is in the form of niacinamide
helps to clear acne when it is applied topically in the
skin. Niacin assists in the reduction of flare ups, skin
inflammation, redness and irritation.
11. CURES ANEMIA
An inadequate amount of oxygen in the blood, low red bloods cell
production and the blood loss are the causes of Anemia. Vitamin B2
helps to prevent the anemia.
12. PROVIDES ENERGY
Vitamin B converts the carbohydrate into glucose which is used as a fuel
to produce energy.
13. PREVENTS TOOTH DECAY
Vitamin D, phosphorus and calcium helps to form and maintain the
dental health by assisting the jaw-bone mineral density, holding the teeth
and tooth enamel.
