2. INTRODUCTION
ASSAM is a state in northeastern india known for its wildlife,
archeological sites and tea farming.

the hilltop kamakhya Temple.

3. HISTORY OF ASSAM
The name Assam is derived from the word asama, meaning
“peerless” in the now extinct Ahom language. The neighbouring
states of Arunachal Pradesh, Nagaland, Mizoram, and Meghalaya
were once part of Assam. The capital, formerly Shillong (now the
capital of Meghalaya), was shifted to Dispur, a suburb of Guwahati,
in 1972.
5. GEOGRAPHICAL INFORMATION
Assam is a land consisting of both hills and plains. The great river
Brahmaputra flows through the land from Sadiya in the east to
Dhubri in the west. ... On the other land the river Surma or Barak
flows through southern Assam from cast to west and is being

8. ASSAM TEA FARMING
The story of Assam tea is about being discovered by a Scottish
adventurer, Robert Bruce, who noticed tea-like plants growing wild
near Rangpur. This was in 1823 and Bruce was on a trading mission.
... The first company that was set up for growing and making
this tea was the Assam Tea Company, started in the year 1839.

10. ASSAM HANDLOOMS
Assam is the home of several types of silks the most prominent and
prestigious being muga.
The golden silk is exclusive only to this state.
Muga and paat- are declicated tribal weaves such as mirijim on
blankets, mattersses and floor coverings.
Of a naturally rich golden colour,muga is the finest of india’s wild
silks.

12. THE FAMOUS FESTIVAL OF ASSAM
1. Bihu Festival
The most significant and important of all the cultural and
vibrant celebrations in Assam is the Bihu festival.

You can find people dancing in vibrant clothes, singing
traditional folk song, preparing for bonfire feasts.

2. Ras Lila in Majuli
This festival is a celebration of the life of Lord Krishna. The
people of Majuli are ardent devotees of Lord Krishna. For several
centuries, they have been performing dramas and dances to
glorify his deeds.
Children and young men and women from all backgrounds also
take part in the plays.

16. ASSAMESE CUISINE
Assamese cuisine is full of character. Cooking techniques include
that of hills as well as plains, so there is a heady mix of
fermented food and fresh produce.
By now you are probably thinking about pork with bamboo
shoot, and why not? This dish, not only in Assam, but popular
in most northeastern states of India, has topped the food
popularity chart and continue to be a favourite of many all over
India.
In Assam, they love it just little bit more than anywhere else in

18. OMITA KHAR
Khar is banana peel's ash extract and is similar to sodium
bicarbonate. This is traditional Assamese dish made of young raw
papaya. Khar gives the already aromatic papaya, a sweet aroma that I
believe adds more to the taste.
19. MASOR TENGA
This dish is made of fish and slices of dried mangosteen. In the
absence of dried mangosteen, the dish can also be made with Kazi
nimbu. This dish is light, perfect for summer time and a favourite
among all Assamese communities.
20. DUCK WITH KUMURA
Locally called "haa", duck is one of the most popular meats
consumed by Assamese folks. White gourd is the choice ingredient
because its natural aroma complements the duck. This dish is usually
heavily spiced, but delicious nonetheless.
21. PANI HAMUK
This dish would be something of a challenge. Pani hamuk, translated
as water snails, when sourced from paddy field or clean flowing
river, taste great. A bit of a challenge because one needs to suck the
meat out of the shell. Water snails cooked with pumpkin or potatoes
are as exotic as they come.
22. FISH COOKED IN BANANA LEAF
This is a steamed dish. Tiny river fishes wrapped and steamed in
banana leaf, and later garnished with chopped onion, coriander and
fresh green chilies. This is one of the traditional Assamese way to
prepare fish item.
23. CHICKEN WITH BAMBOO SHOOT
Cooked with chicken meat, bamboo shoots and lentils, this delicious
food of Assam is an absolute treat. While the taste of bamboo shoot
might not suit all palettes, it leaves behind a unique taste that
compliments meat dishes exceptation well.
25. ANGULI PITHA
In Assamese language, ‘anguli’ means finger while ‘pitha’ is a type of
rice cake. ‘Anguli Pitha’ has got its name from the fact that the
pithas are shaped like fingers.
26. CHHANGBAN LEH KURTAI
Chhangban Leh Kurtai is one of those dessert that is known for its
simplicity. It is a healthy and tasty treat in the states of Assam and
Mizoram. The main ingredients are rice flour, jaggery which are then
steamed. It is then enclosed within leaves.
27. KHAMEN ATHOOMBAASHINBA
Although the name seems complicated, this simple dessert is
combination of fried tomatoes with the addition of sugar syrup. I am
sure this dish looks mouth-watering and complex but it is just simple
dipping of tomatoes in syrup and then frying them in either ghee or
oil along with some cardamom and jeera powder.
28. JOLPAN
Jolpan is a snack as well as a breakfast dish which contains either
roasted or ground rice. The preferred combination is curd, jaggery
and cream. You can find this item during Bihu festival, weddings
and other important occasions. Jolpan includes the preparation of
Pitha, Ladoo, and tea.
