Pumpkin Spice Latte
1 cup of milk
1 tablespoon of white sugar
1 tablespoon of pumpkin puree
1 teaspoon of pumpkin pie spice
1/2 teaspoon vanilla extract
1/4 cup brewed espresso
Whisk 1/2 cup of milk, sugar, pumpkin puree, spice and
vanilla extract into a saucepan over low heat. Simmer
for 5 minutes then whisk in the remaining milk.
Then pour the milk mixture through a fine-mesh sieve
to remove any pulp. Return to saucepan and whisk for 2
minutes. add the espresso and whisk until its foamy.

Soup
1 chopped leak
2 chopped carrots
1 chopped garlic
1 chopped potato
1 tbsp on rosemary
1/2 tsp sugar
410g chickpeas
3 tbsp chopped parsley
2 x 400g chopped tomatoes
425ml of vegetable stock
Put the vegetables, garlic, rosemary, stock and sugar
into a saucepan. Stir well and simmer whilst covered.
Cook gently for 15 minutes.
Preheat the grill to high. Whizz the tomatoes in a
processor until smooth then tip into the vegetables with
the chickpeas and parsley, Heat through and stir before
serving.

Toffee Apples
8 apples
400g golden caster sugar
1 tsp vinegar
4 tbsp golden syrup
Put the apples in a large covered bowl with boiling
water. Once boiled, dry thoroughly and push a wooden
skewer/lolly stick into the stalk end of each apple.
Place the apples close to your stovetop. Tip the sugar
into a pan along with 100ml water and set over a
medium heat, then stir in the vinegar and syrup.
Working quickly and carefully, dip and twist each apple
in the hot toffee until covered, let any excess drip away,
then place on the baking parchment to harden. Leave
the toffee to cool before eating. Can be made up to 2
days in advance, stored in a dry place.
