mackerel, with its vibrant orange earthy flesh and
shimmering silver skin. We’ve come up with a new
way for you to enjoy it.
The Pomegranate and Smoked Mackerel Salad is
a great superfood dish for the whole family to enjoy
and share. This issue is all about sharing inspira-
tional ideas and lifestyle choices.
Why not try your hand at cooking this comfort food
swap and indulge without guilt with a savy food
switch. If however temptation gets the better of
you then tuck into our brioche and blackberry pud-

“Bread and butter pudding has long
been the, erm, bread and butter of
British desserts. We wanted to bring
a fresh twist to this classic favourite.
We’ve used a brioche instead of a
plain bread to give it a rich, buttery
sweetness - Its also suprisingly light
- then we’ve smoothered it with a
toffee apple sauce. A little goes a
long way with this one . . . “

7. Our smoked mackerel super food
salad is packed with good-for-you
ingredients your family will adore.
Ready in 15 mins and serves 4
• 1 Pomegranate
• 1 red pepper, small dice
• 1/2 tbsp wholegrain mustard
• 1 tbsp rapeseed oil
• 2 tsp Manuka honey
• 3 tsp red wine vinegar
• 4 tbsp extra virgin olive oil
• 3 large fresh mint sprigs
• 1/2 fresh lemon
• 1/2 tsp Maldon salt
• 1/4 tsp rose harissa
• 1 tsp fresh capers
• freshly ground black pepper
• 4 fresh mackerel fillets, pin-
boned, cut into equal pieces &
the skin scored diagonally with
a sharp knife at 1 cm intervals
• 1/2 red onion
• raw tenderstem broccoli, thinly
sliced lengthways
• 400g tin of lentils, drained and
rinsed
• 25g (1oz) pumpkin seeds
100g bag of watercress
1 Cut the pomegranate into 1/4’s
and deseed, collecting any escaping
juice. Place half the seeds in a food
processor and blitz. Strain the juice
and pour into a small pan. Add the
honey and bring to the boil, reduce
by half. Place all the other dressing
ingredients such as rapeseed oil,
pepper, mint, red wine vinegar, mus-
tard, rose harrissa, chopped capers
and freshly ground black pepper
into the bowl with the pomegranate
juice and combine. Add the seeds
and reserve.
In a large shallow pan, heat some
olive oil until very hot, add the onion,
broccoli, stir fry for 2 mins. Season
with lemon rind, juice, salt & pepper.
Add the mackerel, skin side down
and cook for three minutes. Prepare
a salad using the watercress, sprin-
kle with lentils and pumpkins seeds.
Arrange a small pile of spring greens
on a plate, place the warm mackerel
on top. Spoon the dressing around
and serve.
