2. Family Owned & Operated
Boann Distillery & The Whistler Irish
Whiskey are owned and operated by the
Cooney Family, who have been involved
in the Irish drinks industry for over 40
years.
Every member of the family is involved
in the distillery project in some way,
including Max, the distillery dog!
The Whistler is named after the
Patriarch of the Family, Pat Cooney, who
is well known for his amazing whistling
skills. True to his name, whistling
melodies fill the halls of the distillery
from morning to night, every day.

3. World Class Distillery
Boann Distillery is a world class facility.
With 3 Copper Pot Stills for Whiskey
distillation and 1 for gin, Boann
Distillery is awash with great aromas of
some of Ireland’s finest spirits.
The Distillery is lead by Head Distiller,
Michael Walsh, who at 29 years of age,
is Ireland’s Youngest Head Distiller.
With accolades such as “World’s Best
Gin” at the World Gin Awards &, “Best
New Whiskey” at the Irish Whiskey
Awards, and a Masters Award at the
Spirits Business’ Ultra Premium Vodka
Masters, Michael is one of the few head
distillers in the country with global
accolades across all major categories of

5. The Whistler Trilogy
The Whistler Double Oaked is a hand
selected, premium Irish whiskey
expression that is crafted in small
batches using some of Ireland’s finest
malt and grain whiskeys.
The blend is 20% single malt (malted
barley) whiskey and 80% grain (corn)
whiskey.
Our Head Distiller selects the finest malt
whiskey and grain whiskey matured in
ex-bourbon barrels and marries them
together in ex-sherry barrels to finish this
exquisite blend.

Core Range Whistler Trilogy
Nose: Salted caramel and vanilla jump out
of the glass with light oak spices and
undertones of zesty citrus, honey and a
hint of nuts.
Palate: Honey and creamy vanilla come to
the fore with light oak spices that are all
followed by the zesty citrus peel. A
deliciously drinkable whiskey.

collaboration between our family beekeepers and our
love for Irish whiskey.
We take some of the finest ex-bourbon matured and
sherry finished Irish Whiskey and we infuse it with
honey, harvested from our own family orchards.

The Cooney Family are the 2nd largest hard cider
producers in Ireland, which requires their orchards to
be pollenated by millions of the Cooney’s own bees.

10. Freshly disgorged Single Malt casks were filled with the
award winning Boyne Brewhouse Imperial Stout,
imparting the stouts wonderful rich flavours into the
wood. We then refill these seasoned casks with our
blend of Irish Malt and Single Grain whiskeys which
bestow deeper notes of roasted coffee and cacao nibs.
Limited Edition: Only 3,000 bottles produced annually.
Rare Whiskey: One of the only Irish whiskeys to utilise
Wheat Whiskey in the blend. Which gives incredibly
creamy mouthfeel.

13. Named for the bodegas where we sourced
some of Spain’s most exquisite Oloroso Sherry
Butts and matured some of Ireland’s finest
triple distilled single malt in them for at least 5
long years, which created a single malt with
juicy, sherry vibrancy whilst never losing that
characteristic single malt quality.
100% malted barley, wholly matured in
Spanish Sherry Butts for 5 years.

Core Range Whistler Single Malt
Nose: Stewed dark fruits, leather,
chocolate and tobacco on the fore with
citrus peel and caramel undertones.
Palate: Oily mouthfeel, with leather,
spices, dried figs and sultanas, coupled
with bitter chocolate and dry citrus peel.
Finish: A long, lingering, dry mouthfeel
with dried fruits, and maltiness remaining.

The Whistler Single Malts

14. The Whistler P.X. I Love You Single Malt is a
fantastic example of the decadence of the
Pedro Ximénez sherry and the influence this
fortified wine’s casks can have on excellent
single malt Irish whiskey. Finished for at least 6
months in PX casks this single malt exudes
delicious sherry influence.
100% malted barley, initially matured in ex-
bourbon casks before being finished in ex-PX
Sherry Casks for at least 6 months.
The Whistler P.X. I Love You
Core Range Whistler Single Malt
Nose: Fantastically delicious sherry nose. Dried
berries, raisins, cherries & sultanas/golden
raisins, with candied orange, with sticky
brown/demerara sugar.
Palate: Wood forward opening, with an
incredibly viscous yet crisp palate. The dried
fruits and brown sugar from the nose are joined
on the palate by walnut, zesty citrus and a hint
of leather.
Finish: Walnut, dried fruits and the subtle wood
prickle remain for a lengthy dry finish with a
subtle hint of dark chocolate.
