1. Green Beans, Shallots and Mushrooms
Ingredients:
1 poundgreenbeansfresh,cutinto1-inchpieces
1 tbspwater
2 tablespoonsoliveoil
1/3 cup choppedgreenonions(about2medium)
3/4 poundgroupednewmushrooms(ie.buttons,babybella,shiitake mushrooms,clams,
chanterelles) cutintosmall pieces
Saltand blackpepper
Direction:
Put the mungbeansina safe bowl equippedwithamicrowave ovenandrinse withwater.Cover
tightlyandheatin the microwave for4 minutes.Carefullyremove the lid,putitina colander,shake
off a large amount of water,and putit ina safe place.
Whencookingthe beans,heatthe oil to a medium-hightemperature inahuge non-stickpan.Add
the shallots,cook,andmix until sweetened,about2minutes.Addthe mushroomsandcook,mixing
infrequently,until theirdrainedwaterdisappearsandstartsto brownafterabout 10 minutes.Add
greenbeansandmix to consolidate andrearm.Seasonwithsaltandpepperandserve.
