Pumpkin Butter is perhaps one of the best most memorable treats of the season. With Pie and Sugar Pumpkins available at such reduced prices, take advantage of it. I make the Pumpkin seeds at the same time. Check out my Slideshare for Pumkin seeds coming soon!

How to make pumpkin butter

  2. 2. Pumpkin Butter from HydroHarvestFarms.comChoose your Sugar Pie Pumpkin. This is a small Pumpkin that is very sweet and has a lotof flesh.To make the puree:Cut your pie pumpkin in half starting at the stem and around. Remove the seeds andstringy inside. Place the halves on a cookie sheet and place in 325 oven for about 45minutes. Remove and let cool. Scoop the flesh out with an ice cream scooper orsomething similar. Place flesh in a large stainless cook pot for further cooking. Onepumpkin should yield about 3 cups of puree.Making the Pumpkin Butter For every 3 cup pumpkin puree add: 1 1/2 cup white sugar 1 Tablespoon of Pumpkin Pie Seasoning Add the above ingredients to the pot of pureed pumpkin and heat on low, stirring occasionally. Simmer uncovered for 30 minutes. Meanwhile fill your canner with water and place the rack inside; bring to a boil. Fill the clean jars to 1/4 inch from the top with the hot pumpkin mixture. Then tamp the jar on the countertop several times to try to work out the bubbles. Place clean bands and lids on the jars and tighten. Place jars in Boiling Bath for 20 minutes. Remove and cool. Makes 3 ½ Pint jars.

  4. 4. Cut the Pumpkin in half and remove seeds and stringy stuff
  5. 5. Use an Ice Cream Scoop for easy removal
  6. 6. Save the seeds to roast later
  7. 7. Place Pumpkin Halves on a cookie sheet and add 1 cup of water. Bake for 45 min in 325 degree oven
  8. 8. You can tell when done when thepumpkin gives to finger pressure.
  9. 9. Scoop out the flesh into a large stainless pot.
  10. 10. Mash the flesh well or use a stickblender, masher or hand held blender.
  11. 11. Add your sugar and Pumpkin Spices to puree and stirwhile heating. Bring to a slow boil, about 30 minutes
  12. 12. Bring your Canner up to a boil while cooking the Puree.
  13. 13. The Butter is ready to put into yourclean jars when it is thick on the spoon
  14. 14. Fill your jars to ¼ inch of top and tap down the jar. Clean the edges of the jar.
  15. 15. Place the clean lids and bands on your jars.
  16. 16. Remove jars from canner after 20 minutes and allow to cool.
