2. Responsibilities
Daily inspection for all food processing chain starting from receiving and end by serving food. Including:
( from gate to plate )
Suppliers’ inspection: during receiving process &on spot check in his production area.
Receiving: follow up to Ensure all hygiene requirements for received products.
Store: implementing FIFO (first in first out), hygienic conditions (Ventilation, temperature, handling….
etc), Date of Receiving, Free from Hazards…etc
Fridge Inspection: ensure proper Fridge Temperature, items dating , organization inside the fridge.
Fridge Calibration: calibrate the fridge and chiefs thermometers every 6 months.
Cooking &Cooling procedures: Ensure cooking process with recommended minimum internal
temperature also ensure using proper procedure for cooling process
Serving: Ensure serving in proper temperature - cold &hot buffets.
Steward supervision: Follow up stewarding procedures to ensure proper cleaning & sanitation of all
equipment, shelves, floor, wall..etc, ensure proper use of chemicals based on MSDS of chemical
company.
Daily inspection for all restaurants& bars.
Water hygiene: follow up with water treatment station (R.O.), changing of Ice makers filters and UV
lamp. Measure chlorine, pH percentage.
Legionella protocol : control by implement the super-chlorination techniques,
SPA, Jacuzzi & Swimming Pool: daily Inspection to ensure it is clear, free from any foreign object,
free from algae and measure chlorine, pH & cyanuric acid percentage.
Conduct hygiene Meeting with F&B, Executive Chef, Chef steward, Engineering and General
manager every month for discussion our major problems to take proper corrective action.
Follow up with Pest Control company: By assign monthly and daily schedule including all
operation area.
HACCP Documentation control: Design and verify HACCP forms include (food temp., fridge temp.,
cooking, defrosting, holding, reheating, cleaning schedules….etc).
Daily inspection for catering airline area to ensure high quality of meals, free from any hazard ,in
proper temp during storage .dating of meals &organization inside fridge.
Prepare catering area to take ISO 22000 certificate.
Assign and implement all the hygienic policy and procedure.
Audit report: Follow up with audit did by Auditing provider companies e.g. e-Cristal, SGS, HIIS, URS
and travel agencies Auditors. to ensure corrective action taken.
Lab report: sending monthly food &water samples for lab analysis and follow up the result to take
proper corrective action.
Complains: meet &investigate with the guest who complain from any food borne illness.
Shops &clinic: weekly inspection for cleaning.
Staff housing: weekly inspection for cleaning &water supplies.
Training: prepare a training schedule for food handler staff. Done By consultation company, ministry
of tourism &suppliers as (chemical company) and by myself as on job training
