This document discusses popular dishes that can easily be made vegan, including omelettes made with chickpea flour instead of eggs, French toast made with chia seeds instead of eggs, Caesar salad made without cheese and with a cashew-based dressing instead of one with egg yolks, chicken salad sandwiches made with chickpeas instead of chicken, tacos filled with roasted butternut squash instead of beef or chicken, and stuffed shells filled with a blend of tofu and spinach instead of dairy cheese. The author aims to dispel the misconception that vegan dishes do not taste good and that veganism is difficult by providing examples of familiar dishes that can be made vegan.
