A bit about..
HEAD CHEF – GUIMAS
Guimas, is an absolute foodie. Originally from Portugal, he’s 35
years old and has been working in the food industry for 13 years.
He loves to cook and loves to eat! He always takes great pleasure
in providing fresh and healthy food.
His philosophy to food and healthy eating has always been about
enjoying everything in a balanced way: lots of good stuff, loads of
variety, and the odd indulgence every now and then.
Knowing how to cook means you’ll be able to turn all sorts of
fresh ingredients into meals when they’re in season at their best,
and cheapest!
Look out for his sound bites on each dish we will enjoy today.
“When you become a chef you no longer
‘throw something together’ or ‘make some
dinner.’ Being a chef certifies you as a
‘foodie.’ You care about what is served to
you.”

5. What’s great about this dish?
Protein: Featuring an egg and pistachios, this dish is really high
in protein. Pistachios have 20g of protein per 100g, similar to
raw salmon.
Umami: It’s one of our favourite tastes, also often described
as ‘savoury’ and mostly associated with meat. However, ripe
tomatoes and mushrooms have that same flavour - so keep
looking out for these!
PORTOBELLO HASH
Ingredients:
Portobello Mushroom, Fried Egg, Potato, Pistachio Pesto, Balsamic Glaze
WHAT’S THE CHEF’S MAGIC?
Guimas: “This dish is all about the the brunch classics!
I love classic potato hash & complemented
it with a tender, hearty portobello
mushroom topped with a vibrant
take on a classic pesto sauce, made
with toasted pistachio nuts.”

6. What’s great about this dish?
Sweet Tooth: Bananas are one of the better ways to satisfy a
sweet tooth and banana bread is more nutritious than toast.
Mint & Orange: It’s often great to cut through rich dishes with
sharp citrus and aromatic herbs. Get experimental and see how
you can switch these up with your favourites.
FRENCH TOAST
Ingredients:
Banana Bread coated in Eggs and Cinnamon with Sugar, Strawberry Jam,
Orange Yoghurt, Fresh Strawberries and Mint
WHAT’S THE CHEF’S MAGIC?
Guimas: “This dish is very special to me because
it takes me back to my childhood. No table at Christmas is
complete without “Rabanadas“ (Portuguese)
version of French toast in Portugal.
My love for this delicacy gave me inspiration
to try a different version of the dish.”

7. What’s great about this dish?
Different & Unusual: Do try this at home for
something more exotic, yet accessible. Avocado
and Mozzarella give a deliciously creamy texture
with their healthy fats. The watermelon makes it
light and adds a subtle sweetness.
WATERMELON
CAPRESE

Mozzarella,
Watermelon,
Avocado,
Apricot Glaze and
Olive Oil

WHAT’S THE CHEF’S MAGIC?
Guimas: “The simplicity of this dish allows
each ingredient to shine. By adding
avocado & watermelon I’m trying
to elevate the textures, flavour and
overall aesthetics of the dish.”
8. What’s great about this dish?
Rich, earthy & filling: the subtle sweetness of
sweet potato, freshness of kale, and richness
of onions, all fried in coconut oil, which makes
ingredients softer in flavour.
Nutritious & Vegan: A well-rounded vegan dish,
featuring complete proteins (tofu) and lots of
iron (kale).
Cumin & Turmeric: aside from being delicious,
these spices can work miracles for your
digestion
SWEET POTATO
& KALE HASH
Ingredients:
Kale,
Sweet Potato,
Tofu,
Red Onion,
Coconut Oil,
Turmeric,
Cumin
WHAT’S THE MAGIC?
The combination of ‘super’ spices makes
this an Ethos bestseller

A note from
MORE THAN CARROTS
We want to ensure that you have as many enjoyable
experiences with vegetables as possible.
Eating less meat shouldn’t have to be sacrificial,
although sadly often it is. We started More Than
Carrots to bring together, in one place, the best bits
from our own meandering experiences.
Enjoyment goes a long way to ensuring new habits
and goals are achieved. Our position is to help you
avoid the bad by showing you the fun, exciting, and
to let you feel great doing it. As Guimas said, it’s all
about ‘balance’!
After today’s event we hope that you’ll have learned
a few quick and easy tips that will allow you to have
more creative meat-free (and/or low meat) meals in
your day to day.
12. PASS IT ON
If we’ve caught your curiosity for making great things
with vegetables why not pass it on...
We’ve packed our kits full of food and inspiration just like

Take a look, if you will at morethancarrots.co.uk/kit
Finally, thank you once again for coming and for letting vegetables into
