•Currently Dairy Queen uses a 3.5oz fully cooked chicken breast that is
run thru the Nicco Grill.
•The prep-cook then cuts the breast into strip and they are placed in to
the Duke Holder. Chicken can be held for up to 40 minutes then must
be discarded.
•Wraps use two strips, Sandwich use four strips and Salads use five
strips.
•The chicken is never served as a whole breast.

•Dairy Queen has installed MerryChef/TurboChef ovens in all your
stores. Sandwiches are made to order. No longer having to cut a whole
breast and hold the strips.
•Reduced liability and labor costs by removing the knife from the prep-
cook hands.
•Sandwiches would be fresher since chicken could be cooked to order.
•Reduced costs since you would not have to dispose of chicken that is
be held too long.
•Thinly Sliced Chicken looks like it was cut in the back of the house not
a factory.
•More consistence product would be served to the customer.

6. Advantages Fully Cooked Chicken Breast Strip
•The raw material pool for sized breast is a premium the price. The
difference between a fully cooked breast and fully cooked breast
strips can be $1.20 to $1.30 a pound.
•If Dairy Queen purchases 800,000 pounds of fully cooked sized
chicken breast the saving could be roughly $960,000 a year.
•In a market where commodities continue to climb this would be a
welcome savings to your franchisees.
