5. FISH PANGO HISTORY
The Fish Pango is a dish originally from the Amerindian peoples in what is currently the
department of Loreto, in Peru.
The first record of the Pango occurs in the writings of the Catholic missionary Franz
Xavier Veigl in the seventeenth century in the General Command of Maynas.1
Its preparation is simply boiled water with salty fish meat, it is usually accompanied by
pieces of cassava or banana sancochado, in addition to cocona chili.
Some pyars are prepared with fresh fish, the Ministry of Environment of the current
Peruvian government considers the Amazonian dish as one of the most nutritious
meals, and this among its meals used for its feeding campaigns against anemia.
Depending on fish meat, the Pango receives the local name of the fish with which it is
accompanied; as the Paiche Pango (derived from the gigas Arapaima) 4 or Palometa
Pango (derived from the my lossoma albiscopum).

7. COCONA SODA PREPARATION
