Description
Peanut or groundnut is a species in the legume or "bean"
family and the plant grows 30 to 50 cm (1.0 to 1.6 ft) tall. The
leaves are opposite, pinnate with four leaflets (two opposite
pairs; no terminal leaflet), each leaflet 1 to 7 cm (⅜ to 2 inch)
long and 1 to 3 cm (⅜ to 1 inch) broad. Indian groundnuts are
available in different varieties: Bold or Runner, Java or Spanish
and Red Natal. The main Groundnut varieties produced in India
are Kadiri-2, Kadiri-3, BG-1, BG-2, Kuber , GAUG-1, GAUG-10,
PG-1 , T-28, T-64, Chandra, Chitra, Kaushal, Parkash, Amber
etc. They have a rich nutty flavour, sweet taste, crunchy texture
and over and above a relatively longer shelf life and used in
variety of dishes

Description
The oil of mustard seeds has a distinctive pungent taste,
characteristic of all plants in the mustard (Brassicaceae) family.
It is often used for cooking and is the traditionally preferred oil
for cooking. The oil makes up about 30% of the mustard seeds.
The characteristic pungent flavor of mustard oil is due to allyl
isothiocyanate. Mustard oil has about 60% monounsaturated
fatty acids (42% erucic acid and 12% oleic acid); it has about
21% polyunsaturated fats (6% the omega-3 alpha-linolenic acid
and 15% the omega-6 linoleic acid), and it has about 12%
saturated fats.

Description
Introduction Sesame is commonly known as “Till”. It is one of
the earliest domesticated plants. It is a short duration crop

oil. Due to the presence of potent antioxidant, sesame seeds

Description
Soybeans are a globally important crop, providing oil and
protein. It compose about 18-20% of extractable oil by weight.
The seeds are then subjected to pressing oil and the residue
soybean meal is used as animal feed. Crude soybean oil is
deep yellow and contains impurities such as moisture, lecithin,
free-fatty acids, and certain volatile compounds. These
impurities are then removed through further refining to obtain
acceptable standard cooking oil. Refined oil is clear light yellow
liquid, and features neutral odour and taste. Fresh oil has very
low free fatty acids (FFA) less than 0.1%. Its specific gravity @
25 °C is 0.9150–0.9280, Iodine value-75 – 94, and
saponification value-184 – 195.
