3. How do we prepare the omelette
Peel and chop the onion.If the potatoes were dirty, pass them by water. Peel them
and cut them. Enter everything in the pan, puy it over low heat for 25-30 minutes.
Remove the fry and drain it. Transfer the oil to a container and reserve. Clean the
pan with paper towels.
4. Shell the eggs, place them in a large bowl and beat them. Salt them to your liking,
add the potato fry and mix well. Put the pan back on the fire, add a splash of the
reserved oil and add the mixture. Stir a little with a wooden spoon and wait (20
seconds) for it to begin to set. Separate the edges, cover the pan with a dish of
greater diameter than the pan and turn it over. Cast it again to set on the other
side.
