concerning the rise in childhood obesity &

18. Extraordinary Quinoa
(Complete Proteins, The History of Whole Grains)
• Ingredients
• 1 3/4 cups quinoa; 2 1/2 cups water; 1 TBS extra-virgin olive oil; 1 TBS
• butter; 1 medium onion, chopped; 1 green bell pepper, thinly sliced; 1
garlic clove ,3 tsp flat-leaf parsley,
• roughly chopped; plus more for garnish; salt
• Directions
• Rinse the quinoa very well. Put the quinoa it in a medium saucepan, add the
• water and let it cook for 15 to 20 minutes or until the quinoa is puffed and the
• water is absorbed. Fluff with a fork.
• In a separate large frying pan, heat the oil and the butter over medium-high
• heat until butter is melted. Add the onion, green pepper, and garlic, and green
• pepper and cook. Stir until the onion is transparent; approximately 5 to
• 7 minutes. Add parsley and the salt to taste.
• Add the cooked quinoa and mix thoroughly.
• Serve hot, garnished with chopped parsley.
19. Salsa Demonstration
• • 2 tablespoons olive oil, plus more for brushing tomatoes
• • 2 serrano chiles
• • 1 small yellow onion, coarsely chopped
• • 6 tomatoes
• • Salt and freshly ground black pepper
• • 2 limes, juiced
• • 1/4 cup chopped fresh cilantro leaves
• Heat grill to high.
• Heat oil in a small saute pan and saute the chiles, onion, and garlic until soft.
• Brush tomatoes with oil and season with salt and pepper. Grill on both sides until
slightly
• charred and soft.
• Transfer tomatoes and serrano mixture to a food processor; add the lime juice and
salt and
• pepper and process until smooth. Add the cilantro and pulse a few times (there
should be
20. Stir Fry
• Ingredients
• 3 tablespoons soy sauce
• 1 cup fresh broccoli orets
• 1 medium carrot, thinly sliced
• 1/2 small onion, julienned
• 1 tablespoon vegetable oil
• 1 cup shredded cabbage
• 1 small zucchini, julienned
• 6 large mushrooms, sliced
• 1/2 teaspoon minced garlic
• 1 c. cooked whole wheat pasta
• Directions
• In a small bowl, whisk the cornstarch, water and soy sauce until smooth; set aside. In a
• large skillet or wok, stir-fry the broccoli, carrot and onion in oil for 5 minutes. Add the
• cabbage, zucchini, mushrooms and garlic. Stir-fry until vegetables are tender. Stir in soy
• sauce. Serve with rice if desired.

– Frozen fruit and yogurt, we use in our parfaits

– Cilantro, we make a fresh salsa at the high schools
– Tomatoes, we use in all kinds of recipes
