  4. 4. Facts <ul><li>Coagulation on eggs is 80 °C . </li></ul><ul><li>Hard to maintain this temperature on stove . </li></ul><ul><li>Not very productive to stand on the stove stirring and testing its temperature at the same time . </li></ul><ul><li>Yield management in the kitchen . </li></ul>
