  5. 5. www.axion.edu.gr6/4/2014 5 The cultivation of cereals is reported to be very old. It dates back to the Neolithic era. Initially the seeds were being consumed raw. a lot of time passed until the way of preparing bread was discovered. For example how flour was made from wheat and in turn how the flour mixed with water was transformed to mush. It is certain that the first bread was azyme.
  6. 6. www.axion.edu.gr6/4/2014 6 SMALL HONEY CAKES-MELOMAKARONA For 45-50 pieces we are going to need • 1,5 glass of oil • 1 glass of freshly squeezed orange juice • 3 full spoons of sugar • 3 full spoons of grated nut • 1,5 spoon of soda bakery • 1 kg of wheat flour for dough The quality of the ingredients must be exceptional!
  7. 7. www.axion.edu.gr FRUMENTY-TRACHANAS PREPARATION: The homemade preparation of frumenty is taking place mainly during summer and usually in August. In order to make 5 kg of frumenty we use 7.5 of wheat flour, 4, 5 kg fresh milk and 100 gr salt. We boil the milk and when it gets cool we blend with the flour and the salt. We knead the mix and we separate it in small pieces that we leave for 1 day in a shady place in order to get dry. The next day we rub every little piece of frumenty in a special grater and we leave the grated pieces in a table for 2-3 days in order to lose their wetness. Eventually we store the product in glass made vases. 6/4/2014 7
