3. What is Food Technology…?
• Food Technology is a branch which integrates Food Science and Food
Engineering subjects, and constitutes a set of methods and techniques
to transform raw ingredients into processed foods.
• Food Technology is not a cookery course like Home Science or Hotel
Management.
• But deals with Food Chemistry, Food Microbiology, Biotechnology,
Human Nutrition, Plant Science, Animal Science, Packaging and
Marketing.
• It also deals with Engineering Subjects like Fluid Mechanics, Mass
Transfer, Heat Transfer, Unit Operations, Process Equipment Design &
Drawing, Biochemical Engineering, Process Optimizations and
Engineering Mathematics.
4. Why Food Technology…?
India is one of the major food producers in the world.
In terms of world ranking, India stands :
1st in the production of Cereals, Milk & Livestock population
2nd in producing Fruits & Vegetables
Among top 5 in producing Rice, Wheat, Groundnuts, Tea, Coffee,
Tobacco, Spices, Sugar & Oilseeds
Despite being a major food producer, India’s share in world food trade is
less than 2%.
The level of processing in India is extremely low at around 6% compared
to 60-80% in developed countries and over 30% even in most other Asian
countries.
5. Why Food Technology…? Contd
There is clearly very high wastage (about 30% post harvest losses) and
very low value addition in our country, with corresponding loss of
business opportunities as well as loss in farm income.
Need for preservation of food through processing (Decrease of cultivated
land and increase in population)
The market for processed food is growing very fast. There are about 300
million upper and middle class consumers of processed and
packaged food in the country, and another 200 million were likely to
be added.
The food processing industry is coming of age, ranked fifth among
industries of India. Five hundred food parks are planned all over the
country.
With such a scenario, there will be absolutely no problem of employment
for qualified food technologists in future in our country.

Food Processing Industry is a sun rise industry with very good job prospects in
India and abroad.
