Proteins are long chains of amino acids. Hemoglobin is a globular protein present in red blood cells that has the function of attracting oxygen molecules because the iron atoms inside hemoglobin attract oxygen. Proteins are found in both animal foods like meat and eggs and plant foods like cereals and legumes. Proteins are the most complex organic molecules in our body after water and perform all four functions of food: energy, plastic, regulatory, and protective.
Avitaminoses are a assorted groups of diseases, and as unrelated to each other as the chemical constituents of the various vitamins, they too share enough group of diseases..
This chapter discusses the fat-soluble vitamins A, D, E, and K. It provides information on their roles in the body, deficiency symptoms, toxicity, recommendations and major food sources. Vitamin A supports vision, cell growth and reproduction. Vitamin D aids in bone growth and calcium absorption. Vitamin E acts as an antioxidant and vitamin K is essential for blood clotting. Deficiencies can cause night blindness, rickets, hemorrhaging or other symptoms. Toxicity from high supplement doses may also occur.
This document discusses vitamins, including their history, classification, sources, and deficiency diseases. It provides details on both water soluble vitamins like vitamin C and B-complex, as well as fat soluble vitamins A, D, E, and K. Key points covered include the coining of the term "vitamin" by H.J. Funk, the classification of vitamins based on solubility, sources of each vitamin, and diseases that can result from deficiencies.

Buon sano appetito a tutti!

5. Le vitamine sono così chiamate perché
sono sostanze organiche necessarie alla
vita. Aiutano il nostro corpo a crescere,
proteggerlo da alcune malattie e
regolare alcuni processi cellulari.

they are organic substances
necessary for life. They help our
body to grow, protect it from
certain diseases and regulate
certain cellular processes.

8. Our body is not able to produce vitamins (except the D
and K) so we have to introduce them with food. To take
too many vitamins is useless and in some cases can
cause disease in our body.
9. Le vitamine sono classificate in due gruppi:
- Le vitamine idrosolubili = (gruppo B, C)
- Le vitamine liposolubili = (gruppo A, D, K)
10. Vitamins are classified
in two groups:
- Water-soluble
vitamins = (group B, C)
- Fat-soluble vitamins =
(group A, D, K)

acqua.
