Mark Lopez, President of Crave Catering and Founding Member of the Sustainable Catering Association, has been in the food business for most of his life. (In fact, he began planning and cooking meals when he was 8!) At 21, he worked for James Beard Award Recipient Mark Miller at the acclaimed Coyote Café.
His love for food and passion for the environment inspired him to move to Portland, Oregon in 1997 and open a restaurant, expanding it into a full-service catering business. He and his family live on a 2-acre farm where they produce organics for his catering business.

Amira's Associates organized celebrations of Durga Puja in Kolkata and New Delhi to promote their rice brands. In Kolkata, Amira had a prominent presence at the Deshbandhunagar beguiati premises where banners promoted their brands. In New Delhi, Amira had an exclusive stall at the Co-operative Ground Durga Puja to showcase and sample their rice brands, including Amira Pure Traditional Basmati Rice and Amira Goodlength Slim & Slender Basmati Rice. Customer response and sales to the sampling and promotions were excellent.

The Green Restaurant Association (GRA) is a non-profit organization that has been helping restaurants become more environmentally sustainable since 1990. The GRA provides resources and certification to restaurants to help them reduce costs, increase customers and staff morale by implementing green practices. The GRA's process includes an environmental assessment, consulting support to implement changes, verification of changes, and marketing and PR support to promote certification. Over 700 restaurants have achieved GRA certification levels through following the GRA's standards and implementation process.

with the Maplewood Early
Childhood Center.

GRO, as we call them,

Great Harvest has managed to
adhere to GDA standards and
continue to provide an array of
delicious baked goods. Local
collaboration is also a common
thread that runs through their breads

We have to be honest, we never
thought our local sports bar would
jump on board with the GDA but
like a well-trained olympic diver,
they climbed to the top of the
high dive and their performance
earned a PERFECT score.
The biggest impact The Post
made to their restaurant was
an investment in LED
lighting. It was a costly
undertaking but the
pay-off is significant.
When they began
training their staff in
GDA practices, they
were nervous but soon
discovered they had a
group with true team
spirit for sustainability.

jumped that hurdle. Stop by
the shop for quality looseleaf
teas and accessories. Tea samplings and a complimentary cup of

Pie Oh My! serves delicious award-winning pie. What you may not
know is that the package you take that slice of pie home in meets
GDA criteria. When Pie Oh My! signed-up for the program, they
had to change from Styrofoam to a recyclable container. The
best part for them, the change
offered a cost savings.

6. How did the Green Dining District Happen?
The City of Maplewood
Special Business District
developed a plan of
initiating this district based
on the number of food
purveyors in the
Maplewood community
with business practices
close to the GDA’s criteria
for sustainable dining
practices. Many of
Maplewood’s restaurants and food shops are artisan owned and
operated with “farm to table” values as a core of their business
plan and that also includes composting, recycling and waste
reduction practices that fall in line with the GDA’s criteria. The
criteria for the GDA includes banning indoor smoking, not using
Styrofoam products and not using #6 plastic; participating in
Single Stream Recycling; phasing in CFLs and/or LEDs; and setting
waste reduction and diversion goals.

GDA is one of St. Louis Earth Day's programs that works to make
'earth day every day.' The GDA’s comprehensive, 3rd party
certification process differentiates restaurants that have
demonstrated a commitment to the environment through
practices and policies that shape the way they do business.
Offering green consulting and resources to restaurant owners and
communities, the GDA is the helping hand greening St. Louis' food
service industry. The GDA staff doesn’t just evaluate businesses,
they also help them find ways to practice sustainability and not
incur extra costs, this was another reason the City of Maplewood
Special Business District encouraged the businesses to join.
The GDA’s Core Concepts are:
Ban: indoor smoking, Styrofoam, and #6 plastic
(polystyrene)
Single Stream Recycling
Phase in CFL’s and/or LED’s, and efficient ballasts (as
appropriate)
Set waste reduction and diversion goals, and share waste
data so that they can assess the GDA’s and St. Louis’
restaurant industry’s environmental impact.
Share baseline utility data so that the GDA can aggregate
data for the region’s environmental impact.
Every GDA-certified restaurant has committed to these Core
Concepts.
