28. Team Exercise
In your group, decide on a Team name.
Discuss the Menu selection for the day you have been given. Decide on
what dishes have been selected, the cooking methods used and the
items that are required for preparing, cooking and serving the different
courses. Collect all the equipment that you feel you need to have and
set it out in the area of the Kitchen you have been allocated.
When you have everything prepared, organise a short (5 to 10
minutes) presentation to the other groups, explaining what you have
done and why you made the decisions you have. Be prepared to
describe how you worked as a Team, cooking methods, items of
equipment, time scales involved. Every member of the team must
participate in the presentation.
To assist you, you are allowed to appoint 1 member of the Group to
ask 3 Questions of either Mike or one of the other instructors if they
are available.
