Catering heeft onderscheid gemaakt tussen bistro,
restaurant, café-restaurant, wegrestaurant en
restaurants naar nationaliteit van de keuken. 2009
was een matig jaar voor de Nederlandse
restaurantsector geweest. Het aanbod in de
restaurantsector is volgens cijfers van het
bedrijfschap Horeca en Catering licht gegroeid met
0,1% ten opzichte van 2008. In de afgelopen tien
jaar is het aanbod in de restaurantsector met 12,5%
gestegen. Verder blijkt dat de restaurantsector,
vergeleken met de overige sectoren in de
horecabranche, het niet slecht doet. De sterkst
dalende sector binnen de branche is de
drankensector met een daling van 7,9% over de
afgelopen tien jaar. Ook het aanbod binnen de
hotelsector is gedaald met 1,3%. De
fastservicesector is gestegen met 3,2% en
partycatering is de snelst groeiende sector met een
groei van 165%.

Onze huidige manier van denken en spreken schiet tekort om een integraal probleem zoals de klimaatcrisis te begrijpen. En al helemaal niet om er verzet tegen te bieden. Het ontbreken van een verbindend discours leidt tot een ecopanische toestand waarbij goedbedoelde initiatieven elkaar tegenwerken. De filosofie kan helpen om mensen en organisaties een nieuwe samenhang te laten zien, zodat ze een schaal kunnen ontdekken waarop ze verantwoordelijkheid kunnen opnemen. Hoe? Door een paradigmashift van eigenwijsheid, waarbij het denkende ik centraal staat, naar eco-wijsheid, waarbij het ik is ingebed in een ecosysteem. Pas als we het probleem op een netwerkmatige manier benaderen en mensen als knooppunten zien, bieden zich nieuwe oplossingen aan.
Ecosoof Henk Oosterling legt in zijn lezing uit wat er nodig is om de shift van eigenwijsheid naar eco-wijsheid te maken én welke kerncompetenties je daarvoor nodig hebt. Hij schetst hoe je samen integraal verzet kan voeren op verschillende schalen en schotelt je een ecosofisch vergezicht voor. Tot slot maakt hij ruim de tijd vrij om met het publiek in gesprek te gaan over de praktijken van verzet in de sociaal-culturele sector in Vlaanderen en Brussel, en over de vragen die zijn verhaal ongetwijfeld oproepen.
