This is considered to be a dish of South
Indian origin, and has more varieties
of it than any other part of the subcontinent.
It originated after blending
of Mughlai and Telugu cuisine in the kitchens
of the Nizam. The ingredients are Basmati,
chicken, yogurt, onions,
spices, lemon, saffron. Coriander leaves and
fried onions are used as garnish. Although
the preferred meat is mutton, it is replaced
by goat or chicken in some variations. It is
usually served with Dahi chutney (yogurt
and onions) and Mirchi ka salan - a green
chili curry. Baghara baingan (roasted
Eggplant) is a common side dish.

It is a volume roughly equivalent to
120ml, though the rough and ready
measure is the amount of liquor
needed to fill a glass equal to the
height between the index and little
fingers when they are held parallel to
one another. The name originates
from the city in Punjab, and is about
50% larger than a normal shot glass.

This is a popular crispy snack and is
prepared by using besan (gram flour) and
spices, originating from a town in the western
state of Rajasthan in India. A dough
of Besan (gram flour) and spices
including moth dal, salt, red chilli, black
pepper, cardamom, cloves, groundnut oil,
etc. is formed into the snack by pressing it
through a sieve and deep frying in vegetable
oil. Light yellow in colour it is famously known
to have been first prepared here, and over
the years has not just become a
characteristic product of this region, but also
a generic name. In September 2010 it was
granted Geographical Indication protection.

This is a rich sweet dish prepared in butter,
from Southern India, usually served as dessert.
It is made of generous amounts
of ghee, sugar, gram flour, and
often cardamom. It was first prepared in the
kitchens of the Palace by a palace cook named
Kakaasura Madappa out of the above
ingredients. The cook at the Palace kitchen
simply made a concoction of gram flour, ghee
and sugar. When asked its name, Madappa
obviously didn't have its name in mind, so he
simply called it the ‘_______ ____’. First part
referring to the place while the second in
Sanskrit and other Indian vernaculars, means
sweet. It is traditionally served in weddings and
other festivals of southern India. It is very
popular in baby showers too.

of Drishti is not limited to Tamil Nadu or in
India alone. It is replicated with the same

It originated after blending of Mughlai and Telugu cuisine in the kitchens of the Nizam. The ingredients are Basmati, chicken, yogurt, onions, spices, lemon, saffron. Coriander leaves and fried onions are used as garnish. Although the preferred meat is mutton, it is replaced by goat or chicken in some variations.
