4. o We all know spices are used for imparting flavor, color, aroma, taste and
spiciness to food. These flavoring properties are contributed by :
1. Volatile oils : responsible for aromatic properties
2. Oleoresins : contains both aromatic as well as pungent properties
o Above are very delicate compounds and are vulnerable to high temperatures
that are generated during the traditional grinding process. Due to the
temperature rise inside the traditional grinding mills a significant faction of
flavoring components is lost.
o A Cryogenic grinding process uses Liquid Nitrogen to cool the spices before
feeding to the grinder and to maintain the cryogenic temperature in the
grinding zone.
o The dry, cold, inert atmosphere, generated by the Liquid Nitrogen vapor
blanket, minimizes thermal reaction with the spices and reduces the loss of
volatile components during the grinding process.
