3. Rum is a distilled alcoholic beverage made
from sugarcane by products such as molasses
or directly from sugarcane juice. The use of
sugar cane distinguishes rum from other
liquors. The sweet juices from other sugar
cane are turned into molasses by distillation
and the syrup obtained is then fermented
into Rum. The rum is then aged in casks, the
characteristic of which determines the
colour of the rum produced in the end. The
accounts of the world’s first rums point
towards Jamaica, Barbados and Brazil
soon after Christopher Columbus
introduced sugar cane to the West Indies
in 1493. However the first distillation of
rum is believed to have been done in the
Caribbean in the 17th century. There were
slaves from Africa that used to work in
the sugar cane plantations. They
discovered that molasses could be
fermented to alcohol and on proper
distillation, the rums they produced could
be said as the world’s first true rums.
4. Light Rum
Also referred to as White or Silver rums, they are very
subtle and are aged in stainless steel tanks for upto a
year and are filtered before bottling. This gives them
their clean, light flavor and makes them the most
commonly used rum for cocktails
Dark Rum
Also referred to as Gold rums, they are rich and smooth
due to addition of congeners or caramel. They are aged
in oak casks that give them the dark characteristics and
make them a suitable substitute to light rums when
preparing darker cocktails.
Amber Rum
Also referred to as Heavy body rums, they are used in
rum punches or with light rums in some cocktails. They
are the richest in flavors as they are aged in charred
oak casks. They are also the preferred sippers like the
Angostura 1824. A subcategory of the dark rums are
the Black straps, which are produced from the darkest
of molasses by boiling thrice and refining sugar like the
Cruzan Blackstrap and Captain Morgan Black spiced Rum.

6. Spiced Rum
These rums are flavoured with spices, such as
cinnamon and cloves. In colour, they are darker
than light rum.
Flavoured Rum
Flavouring rum by adding spices and aromatics
during the distillation has become popular these
days. Although it began with coconut and ground
spiced rums, the variety of flavoured rums has
grown to exceed the number of other flavoured
liquors.
Overproof Rum
Overproof rums or high proof rums are used as
dash in cocktails. They are 75% pure alcohol (150
proof) and can be dangerous to the human body if
it is not diluted in some way. They are highly
flammable.
Cachaça Rum
This is a Brazilian rum and it is different from
others because it skips the molasses stage and uses
pure sugar cane juice in the distillation process. It
is the sweetest rum of all.

8. Premium Rum
These are fancy sipping rums that
are usually produced in small
boutique distilleries and are aged
for a number of years.
Dry Rum
These are rums that are
fermented from sugar cane juice
rather than molasses and are not
aged in oak barrels but in stainless
steel vats.

Cola
Very simple and a classic, the Rum & Coke/Cola is
traditionally prepared using White rum, however
one can enjoy with one’s favourite variety of rum,
or by adding selected ingredients creating a
cocktail to personal taste and likes. For example
adding lime juice to Rum and Coke creates a
separate drink altogether, the Cuba Libre.
Ingredients:
2 ounces rum
Cola
Lime wedge for garnish
Preparation:
•Pour the rum in a highball glass filled with ice.
•Top with cola.
•Garnish with a lime wedge.

13. Daiquiri
The drink has developed much on the lines of the
Martini and Margarita. The three basic ingredients
are light rum, lime juice and sugar(any sweetener),
though there are many variations found, such as
Strawberry Daiquiri, Frozen Daiquiri, Cranberry
Daiquiri.
Ingredients:
1 1/2 light rum
3/4 oz lime juice
1/4 oz sugar syrup
Preparation:
•Pour the light rum, lime juice and sugar syrup into
a cocktail sugar with ice cubes.
•Shake Well
•Strain into a chilled cocktail glass.

The Pina Colada is a world wide popular
tropical cocktail that has a creamy texture
and is served in it’s mock tail counterpart as
well a lot.
Ingredients:
2 oz pineapple juice
2 oz light rum
1 1/2 oz cream of coconut
Pineapple wedge for garnish
Maraschino Cherry for garnish
Preparation:
•Pour the ingredients into a cocktail shaker
filled with ice.
•Shake Well.
•Pour into a chilled cocktail glass.
•Garnish with the pineapple wedge and
maraschino cherry.

17. Long Island
Iced Tea
Another popular cocktail, this is inspired from
the classic iced tea and is a complex combination
of 5 white spirits – gin, tequila, light rum, vodka,
and triple sec , with a shot of sour or sweet mix
and filled with cola. Triple Sec is a variety
of Curacao liqueur, an orange
flavoured liqueur made from the dried peels of
bitter and sweet oranges.
Ingredients:
1/2 ounce triple sec
1/2 ounce light rum
1/2 ounce gin
1/2 ounce vodka
1/2 ounce tequila
1 ounce sour mix
Cola
Lemon wedge for garnish
Preparation:
Pour the spirits and sour mix into a Collins glass with ice.
Stir well or Shake
Top the glass off with cola.
Garnish with the lemon wedge.

19. Zombie
Zombie is a served at times as a tropical cocktail and at
times as a Halloween party cocktail but in it’s true sense it
is a Tiki Cocktail and is believed to be invented by Ernest
Raymond Beaumont Gantt later changed to Donn Beach
after being popular for his tiki bar and restaurant – The
Don the Beachcomber. Tiki cocktails usually have more
than one rum used, layers of flavours, fruits, spice and
other variationsIngredients:
1 ounce light rum
1 ounce dark rum
1 ounce orange curacao liqueur
1/2 ounce lemon juice
1/2 ounce lime juice
1 1/2 ounces orange juice
1 1/2 ounces passion fruit puree (or
syrup)
1/4 ounce grenadine
2 dashes Angostura bitters
Preparation:
Pour the ingredients into a cocktail
shaker with ice.
Shake well.
Strain into a highball glass with crushed

21. Mojito
Originated in Cuba, it is a very simple cocktail and
is made using mint and lime to accent the rum.
Premium Rums like the Cruzan, Appleton or Mount
Gay make the best Mojito. Over the time it has
had it’s own variations – Koala Mojito, Pineapple
Mojito, Raspberry Mojito
Ingredients:
2 tsp sugar
6-8 mint leaves
Club soda
1 lime, halved
2 ounces Light rum
Mint sprig for garnish
Preparation:
Place the sugar, the mint leaves, and a little club soda
into a highball glass
Muddle well to dissolve the sugar and to release the
mint flavor.
Squeeze the juice from both halves of the lime into
the glass.
Drop one half of the lime into the glass.
Add the rum.
Stir Well
Fill the glass with ice cubes.
Add the rest of the club soda.
Garnish with the mint sprig.
