SUMMER SALAD
(Calorie count: 232)

INGREDIENTS
 1 slice   farmer’s ham (50grams)
1/4 cup sundried tomatoes
(julienne)
4 pieces cherry tomatoes (halved)
½ cup      Romaine lettuce (washed)
1/3 cup Arugula (washed)
1/3 cup Alfalfa sprouts (washed)
1 slice    mango (cut into strips)
½ cup      Mango vinaigrette
¼ cup      honey
1 tsp      almond nuts (crushed)

PROCEDURE:
Wash all vegetables and drain. Toss in
a salad colander with mixed mango
vinaigrette and honey. Assemble in a
vegetable platter.
Add farmer’s ham with sliced mango.
Top with almond nuts. Serve chilled.
SALSA TROPICAL
(Calorie Count: 150)
INGREDIENTS:
½ cup      ripe mango, diced
½ cup      red tomatoes, diced seeds
removed
¼ cup fresh cilantro, chopped
¼ cup white onions, chopped
50gms nacho chips

PROCEDURE:

In a medium bowl, combine all
ingredients and place in shot glass.
Prepare platter of nachos.
