4. Understanding the Principles and Importance of MAP (Modified
Atmosphere Packaging) and Packaging materials for future
purposes
Modified Atmosphere Packaging (MAP) is a packaging process used in food products to maintain
its appearance, texture, and nutritional values without relying on the use of chemical additives or food
stabilizers scientifically, it is an imposition of gas atmosphere containing an inert gas (nitrogen)
combined with an anti-microbially active gas (carbon dioxide) to extend a packaged food product’s
shelf life resulting to a prolonged distribution chain and diminishing need for a centralized
production.
