Oliebollen
The traditional
Dutch New Year
     treat

Gluten free Oliebollen Dutch recipe
•   Ingredients:
      – 500 gram gluten free bread mix
      – 40 gram sugar
      – 300 ml warm milk
      – 2 eggs
      – 400 gram raisins and currants (have them swelling up in some warm water) and dry them in a sieve
          before putting them in the mixture
      – 100 gram apricots cut into small pieces
      – 2 sachets of Edmonds instant yeast
      – 200 gram crème fraiche or quark
      – Teaspoon salt
      – 3 tablespoons of rice flour
      – 1 grated apple
      – 50 gram walnuts.
•   Mix :Milk, sugar and yeast in a bowl. Cover and leave in a warm spot for 20 minutes.
•   Put flour in mixing bowl or pan big enough to hold the mixture.
•   Add eggs and other ingredients mix well. Add the fruit last.

•   Let it rise again to double the volume in a warm place
•   Put Sunflower oil in a heavy pan and heat.
•   Spoon in the mixture with wet spoons or ice cream scoop. Small enough to float in the oil.
•   When brown turn them. It takes about 7 minutes per batch.
•   Put them on a paper towel and eat them with icing sugar sprinkled over. Enjoy!
History
Oliebollen is eaten on New Years Eve and at funfairs.
In the wintertime Oliebollen is sold on the streets at mobile stalls.
In English they are known more as Dutch doughnuts or dutchies.
Oliebollen originally comes from Portugal.
