This document provides recipes and instructions for making several types of muffins using a quick mix base. The base mix is made by combining 5 cups of all-purpose flour, 5 cups of whole wheat flour, 2 1/2 cups of sugar, 5 tablespoons of baking powder, 2 1/2 teaspoons of salt, and 2 1/2 teaspoons of cinnamon. Instructions are given for basic muffins, as well as muffin variations using dried fruit, fresh peaches, banana, or blueberries. Additional recipes include molasses bran muffins and zucchini muffins.
