15. Peshawari Chapli Kabab:
• 1 kg beef mince
• 1 tbsp white cumin chopped
• 1 tsp coriander
• salt (as required)
• 4 pieces green chili chopped
• 3 pieces tomato chopped (without seeds)
• 3 tsp red pepper (crushed)
• 3 tbsp green coriander (chopped)
• 1 & 1/2 tbsp pomegranate seeds (crushed)
• 2 tsp ginger (chopped)
• 1 tsp black pepper (crushed)
• 1/2 onion (chopped)
• 1 eggs
• 6 tbsp corn flour
• oil (as required)
Directions for Chappli Kabab:
1- In a pot take beef mince, salt, cumin, coriander, green
chili, tomato, red pepper crushed, green coriander,
pomegranate seeds, mint, ginger, black pepper, onion, egg
and corn flour and mix it well and make kebabs.
2- Take oil in a pot and fry them. Your tasty Chapli Kebabs
are ready.
Cooking Time: 40 Minutes Serves: 3-4

• Qabel’i , Quabili or Kabuli Palaw is a most popular dish consisting of steamed
rice mixed with raisins, carrots, and lamb.
• It is made by cooking basmati or long grained rice in a brothy sauce (which
makes the brown rice).
• This dish may be made with lamb, chicken or beef.
• It is baked in the oven and may be topped with fried sliced carrots, raisins,
orange peel strips, and chopped nuts like pistachios or almonds.
• The meat is covered by the rice or buried in the rice mixture.

• Dum means to “breath in’’ and pukht means to ‘’çook’’.
• Dum pukht, larheem or slow oven cooking is a technique in which meat and
vegetables are cooked over a low flame, generally in sealed containers with few
spices.
• It uses a round, heavy-bottomed pot, preferably a Handi (clay pot).
• Cooking slowly in its juices, the food retains its natural aromas.
• In some cases, cooking dough is spread over container to seal food known as
pardah (veil).

called Badayooni Perras.
