Noodles originated in either Europe or China around 2000 BC using millet. Instant noodles were invented in Japan in 1958 by Momofuku Ando to address food shortages after World War 2. There are several noodle-themed holidays and a noodle museum in Osaka was created based on Ando's philosophies. Instant noodles were once considered a luxury but are now inexpensive, and federal law requires noodles to contain at least 5.5% egg solids.
