The purpose of this memo is to address the progress and revisions made to the opening and closing checklists for Rants and Raves Brewery. This memo will go over the changes made and current concerns for the checklists. Any feedback would be greatly appreciated.Summary

Closing Checklist
· Sweep dining area, patio, and grain room
· Stock bathrooms (toilet paper, paper towels, and soap)
· Clean bathrooms (wipe down sinks, mirrors, and toilets)
· Sweep window hallway, throw away old tickets, wipe down window
· Sweep the salad prep area and wipe it down
· Send water pitchers through dishwasher
· Wipe down bars and tables (dining room, patio, and grain room)
· Gather ketchups and store them in the walk-in
· Wash metal grates and rubber pats, flush and wipe out drains
· Wash all glassware and put it away
· Empty sani-buckets and leave to air dry
· Take used towels to dirty hamper in the back
· Turn off both ’s
· Taps wiped down and tap brushes placed in taps
· Turn off open signs no more than 15 minutes early (front, back, and grain room)
· Turn off TVs and turn down music (DON’T TURN MUSIC OFF)
· Return metal grates and rubber mats to their proper places
· Turn off dishwasher, leave auto-cycle on
· Make sure all garbage has been emptied and taken out
· Make sure all server paperwork is finished and stored in daily bag
· Print off Z report and store in daily bag
· Balance till and stow in office
· Turn off lights
· Lock doors (front, patio, grain room, breakroom, office)
· Set security system
· Lock door and leave
· Go home!
Opening Checklist
· Clock in
· Turn on lights
· Turn up the music
· Turn on all TVs (restaurant and grain room)
· Get till from office, grab daily bag, fill out daily sheet
· Count till and record it on daily sheet
· Place daily sheet inside daily bag
· Remove tap brushes and place in bucket with clean sani-water
· Turn on both ’s
· Run first pour through taps
· Fill 4 ice pitchers
· Get ketchups from walk-in and place one on each table
· Check that bathrooms are stocked and wiped down
· Check that salad station ingredients are full (tomato, onion, carrots, radishes, cucumber, feta) and inform kitchen of any needs
· Check and fill dressings (ranch, blue cheese, fry sauce, thousand island, Greek vinaigrette, honey mustard, Caesar)
· Spot sweep restaurant and grain room
· Wipe down all tables and bars
· Turn on open signs at 11:00am (front, back, grain room)
· Grab towels and place neatly beside tap drains
· Fill two sani-bucket with one cap full of bleac.
