5. Thank You
Collaborators and Partners,
Now that Fiore Di Nonno is a few years old, I’m ready for
an expansion. I’m not expanding into a regular cheese shop
- I’m growing my business into a community.
Grange 27 brings together the things that are most
important to me: family history, commitment to craft and
dedication to local farms. More importantly it brings local
businesses and talented neighbors together to create.
Traditionally, granges are places that foster collaboration.
Grange 27 is a modern take on a traditional concept. It is a
space to gather and celebrate community and craft. We are
all connected to the food we eat, but we all know that this
very connection is in jeopardy. We need a space to bring
people back to the table and engage with the food they eat.
I believe in this community. Together we have the power
to promote these values. We can teach people about food.
We can save farms. We can inspire healthier lifestyles. We
can remind people that community is what matters most.
Lets make this vision a reality. I look forward to the
delicious results of our future collaborations.
Happy cooking,
Lourdes Smith

12. A bit of History...
As a child, I was mesmerized by her grandfather’s store,
Fiore’s of Hoboken. I watched him carefully stretch fresh
mozzarella, anticipating the moment when he would
offer me the first bite of freshly made cheese – that warm,
buttery magic.
After varied career stretching from Le Cirque to Panera
Bread, I got to a point where experience and memory
collided. Making mozzarella in the tradition of my
grandfather led to the opening of Fiore Di Nonno, and
then Grange 27.
Local farms supply Grange 27 with fresh curds, so that we
can make and serve mozzarella the same day. Especially
with mozzarella, nothing beats freshness.
