Checking ID:
It is the responsibility of all servers, bartenders, and security to thoroughly check identification
of any customer attempting to purchase alcohol. Be sure not only to check the birth date on the
ID, but also carefully match the picture to the customer’s face. If you are uncertain at all about
the validity of someone’s identification, do not be afraid to get a second opinion and/or notify
management. The only acceptable forms of identification are a valid, current driver's license
issued by the Illinois Secretary of State's Office or any other state, a valid photo identification
card issued by the Illinois Secretary of State's Office or any other state, Armed Forces photo
identification, or a valid U.S. passport or travel visa/passport issued by a foreign country
containing the holder's photo. Birth certificates, photocopies of acceptable forms of
identification, or any other forms of identification are unacceptable.
Serving Alcoholic Beverages:
Per Illinois law, alcoholic beverages cannot be served to any persons under the age of 21, or any
persons who have been impaired by the over-consumption of alcoholic beverages. All bartenders
and servers need to be sure to check for proper identification when security is not present at the
front door. While no one under the age of 21 should be in the establishment at night, sometimes
security may let someone in because they possessed fake identification or they may have secretly
entered the establishment in another way. If you suspect that someone is underage, do not
hesitate to ask for their identification before serving them, likewise, if for any reason you are
aware that someone is not of age, please notify security or management immediately. Please also
notify security or management if someone is severely impaired and needs to be removed from
the premises.
Clocking In:
Employees are expected to show up to work on time. Do not walk in the door at exactly the time
your shift begins. Show up 5-10 minutes early to give yourself time to clock in at the start of
your shift. Time cards are kept behind the bar and will be filled out by management. Please
check in with the manager when you arrive to clock in. Security may check in with the head of
security. You should be fully dressed and ready to work at the scheduled start of your shift.
Tardiness will not be tolerated and will result in disciplinary actions as well as potential
termination.

Work Schedules:
It is every employee’s responsibility to check posted work schedules. These schedules can be
found on the white notice board in the employee coat room/ice room and may also be posted on
the employee Facebook page as a courtesy, however, online posting of the schedule is not
guaranteed. Schedules may change after already being posted. If the posted schedule is changed,
management will make every effort to inform any and all affected parties, however, it is
ultimately up to employees to check the schedule at every shift. Failure to report to a scheduled
shift is grounds for termination.
Availability:
Employees must fill out their availability for the following week on the blank schedule in the
employee coat room, but do not assume you will receive your requested nights off. A blank
schedule will be posted on the white notice board from Thursday-Tuesday. Please fill out your
availability during those days. The schedule for the following week will be posted on
Wednesdays. Upon hiring you will be required to submit your school schedule for review if you
are a student. Every effort will be made to work around student schedules and priority for days
off will be given to those who should be attending class. Management understands that students
may need nights off for studying, Greek events, and other school functions. We will try to be as
helpful as possible in these situations, but submitting a request does not mean that you are
guaranteed to receive that day/night off. Some major events and holidays, such as NIU
Homecoming, are mandatory working days. You will be informed of these mandatory working
days prior to the events with plenty of notice. When requesting off of work there are slips in the
manila envelope posted to the white notice board in the employee coat room that you must fill
out in order for your request to be considered. It is suggested that you request days off as early as
possible. Requests off will be granted on a first come first serve basis, however, students who
need to attend classes will still have priority. Employees may trade shifts amongst each other if
absolutely necessary, however, all changes MUST be approved by management.
White Notice Board:
General information such as employee schedules and other notices will be posted on the white
notice board located in the employee coat room. All employees should check the board daily.
Subsequently this information will normally be posted on the employee Facebook page as well.

TIPS Class:
All employees are required to complete the Training for Intervention Procedures (TIPS) class
with the Dekalb Police Department or at www.gettips.com if you are not already TIPS certified.
Proof of completion of this class must be presented to management. The price of this class can be
deducted straight from your paycheck if you choose to go through the Dekalb Police
Department. If you have any questions, please consult management for more details.
Training Pay for Tipped Employees:
During training each new server/bartender will be paid Illinois minimum wage. The training
period for most employees is 2-3 days up to one week. Management will inform you when your
training is complete. Servers and bartenders do not receive tips until they have finished their
training and begin to receive the lower server pay. Security will make minimum wage during
their training period and beyond, however, they will not receive tips until their training period
has ended.
Pay Period and Pay Day
Rosy’s Roadhouse generates payroll on a biweekly basis. Paychecks will be available every
other Friday or Saturday after 4 PM. Please do not ask for your paycheck early. The manager
will attempt hand out paychecks on payday but is not responsible for seeking out employees. Be
sure to ask the manager for your paycheck if you have not received it. New employees must fill
out the “New Hire Packet” in order to be entered into payroll and begin receiving paychecks.
You may also sign up for direct deposit if you desire.
Payroll Deductions:
Social security tax and federal and state withholding taxes are deducted from each paycheck.
These taxes are required by law. You are allowed to claim one exemption for each dependant
(spouse, children, and parents), including yourself on your “W-4” form. Please report any change
of address, marital status, and number of dependants to the manager.
Overtime:
Overtime is paid to hourly employees who work more than 40 hours in a week. The pay rate for
overtime is 1 ½ times regular pay. All unscheduled overtime must be approved in advance by
management.
Tax Deductions
Rosy’s Roadhouse wants to remind you to save receipts for any purchases you make for your
new job. Bottle openers, work clothes, and other required work accessories that you have to
purchase can be deductions come tax season. Keep these receipts for your own records.

Probation:
All employees will be on probation for the first 14 days of their employment. Employment can
be terminated both during or after this period if the owners and management feel that you are not
working up to their expectations. All employees will be expected to complete and pass a written
exam, specific to their position, before this probationary period has ended.
Re-employment of Former Employees:
It is not our policy to automatically rehire employees that have quit or left for the summer
months. We understand that most of our employees are NIU students and may have no choice
but to return home for the summers, as well as for other school year breaks, such as NIU’s winter
vacation. We also recognize that we have to cut down our staff during the summer months and
cannot keep everyone on payroll for those months and apologize for any inconveniences that
may cause. In order to return to work when the new school year starts, after a summer absence,
you will be subject to a review of your work during your employment and then the decision will
be made whether or not to rehire you for the upcoming school year. Previous employees with a
good record of attendance and an exceptional work ethic will have priority over new hires.
Promotions:
Rosy’s Roadhouse tries to promote from within whenever possible. These types of changes will
normally be implemented at the start of a new semester. As positions become available, qualified
personnel will be given the first chance to interview for the position. Notices will be posted on
the white notice board concerning any positions that need to be filled. Please let management
know if you would like to be considered for a new position.
Appearance and Uniform:
Each employee is required to begin their shift with a neat and clean uniform. You can find the
details of your required uniform in your position specific handbook. All shirts and slacks should
be neatly ironed and free of any stains. Employees must purchase their uniform shirts. The
purchase price can either be paid directly to the business with cash or credit, or we can deduct
the price from your first paycheck. We suggest that you purchase comfortable shoes with non-
slip soles. Black Converse type shoes are a popular choice and acceptable for all employees. All
shirts and pants should be free of any rips or stains, however, girls’ shorts/skirts may have
cosmetic rips/lace/patches. Another part of the Rosy’s Roadhouse uniform is a rag and each and
every employee should have one in their back pocket as we expect all employees to keep the
tables and bar clean and free of garbage and spills. Rosy’s Roadhouse may have theme nights
and employees, except for security, are expected to participate. These nights are exceptions to
the normal dress code, however, high heels and open toe shoes are still not acceptable.

Employee Meals:
Employees of Rosy’s Roadhouse will receive 25% off of their meals. Employee meal orders are
to be given to any on duty bartender or server. Do not go directly to the kitchen to ask for your
food. The kitchen will not make any meals without a ticket from an on duty bartender or
waitress. Alcoholic beverages are not included in the discount. While on duty, employees may
drink soda and juice free of charge. The price of Red Bull for employees is $2.
Employee Bathroom:
The employee bathroom is located behind the VIP room, adjacent to the liquor room. The
purpose of this private bathroom is to allow our employees to quickly use the restroom without
having to wait in the long lines that are often associated with the guest restrooms when we are
busy. Bartenders and barbacks may walk behind side bar to get to the employee bathroom if they
are on duty, however, you should never leave the bar without another bartender present or use
the short cut through side bar if you are not on duty. All other employees must walk around the
bar. The employee bathroom is to be used by employees ONLY. Under no circumstance should
anyone let friends or any other patrons into the employee bathroom. If this becomes a habit then
the privilege of using the employee bathroom will be revoked. You may store feminine hygiene
products or other small items in the medicine cabinet behind the mirror at your own risk but
Rosy’s Roadhouse is not responsible for the loss or damage of any of these items.
Employee Coat Room:
Rosy’s Roadhouse has a designated area for employees to store their coats and other personal
belongings at their own risk. Under no circumstance should any employees let friends or patrons
into this room, nor should they store friends’ or patrons’ coats or other items here. This room is
also where the ice machine is kept, as well as where the white notice board hangs. This coat
room, also referred to as the Ice Room, may be periodically cleaned out at management’s
discretion. Do not leave belongings here over night. Management expects all employees to be
respectful of items in the coat room and also expects employees to keep this area clean and tidy.

Employee Parking:
Employees are to park their vehicles either in the back lot, side spaces, or the front lot spaces that
face the street. The spaces directly in front of the building should be reserved for customers. We
suggest you never park in the few spaces directly in front of the main doors, even when visiting
the establishment as a customer, as vehicle damage is more prevalent here and we are not
responsible for any damages your vehicle may incur. Do not park in the Lukulos parking lot and
please be sure to remind friends of this as well. Parking your car in their lot will result in the
vehicle being towed away at your expense. In order to reduce drunk driving and ensure the safety
of our employees and customers, cars will not be towed from the Rosy's lot. Do not drive home
after drinking!
Employee Entrance:
Employees may only enter and exit through the front door when reporting to work or leaving at
the end of their shift. Please immediately report to the manager to check in. Security should
report to the head of security. When leaving work at the end of a shift, if you feel unsafe walking
to your car alone, please do not hesitate to ask security to escort you to your car or have the
manager let you out of the back door if your car is in the back lot.
Employee Shift Drinks:
At Rosy’s Roadhouse, we appreciate the hard work that all of our employees put into the bar. For
this reason we would like to offer each employee a drink at the end of their shift. This applies
only to employees of legal drinking age. Do not abuse this privilege! You are allowed one drink
and may drink while doing your closing duties if it does not interfere with the task at hand. If you
cannot easily complete your closing duties while enjoying your shift drink then you must wait
until you have completed everything until you ask a bartender for your drink. Please remember
to throw away cups and clean up after yourself. If management sees that cups, condensation
rings, or spills are being left at the end of the night, this privilege WILL be taken away from
some or all employees.

Personal Belongings:
Employees are encouraged not to bring valuables into the bar. Rosy's Roadhouse is not
responsible for personal belongings that are brought to work. All personal items are to be stored
in one of three locations; the employee coat room, the employee cubby behind the bar, or in the
office. While the coat room is for employee use ONLY, we cannot guarantee that your items will
be safe there. If you have something valuable that you must bring to the bar with you, you may
ask management to store it in the office. We ask that you do not leave any personal items in the
bar after your shift has ended. Employee areas may be periodically cleaned out after bar close
without warning.
Phone Usage:
Cell phones should not be used when you have customers in the building and/or have not
finished your daily cleaning and prep duties. You may utilize the employee cubbies behind the
bar for a safer place to store your phone. We expect employees to check in to social media at the
start of their shift as well as text friends and ask them to come out to the bar. Excessive use of
phones can and will result in disciplinary action.
Lost and Found:
Behind the bar we have a small cubby designated for smaller lost items such as keys and phones.
We also have a red box in the employee coat room for larger items. Please hand any items you
find to a bartender and inform them that it is a lost item. Bartenders should then place them in the
appropriate spot.
Customer Relations:
We are here to serve our customers. THEY pay our wages and salaries. Do not take it personally
if a customer is rude to you. We will not tolerate any type of arguing or being rude to a customer.
If you are having an issue, politely excuse yourself and seek out the manager. We understand
that there will be many drunk patrons, some of which will be very unreasonable, so do not
hesitate to seek out security if you see a potential problem arising. While we expect you to be
polite to customers even when they are in the wrong, we do not want our employees to be treated
poorly and management or security will take care of these situations when notified.

Promoting:
All employees should utilize social media and any other forms of communication to invite
friends to the establishment. The more people we can bring into the bar directly affects your tips.
Filling the bar with friends creates and fun and energizing atmosphere which will help attract
other customers and keep people in the establishment longer. Any day or night that your are
scheduled to work, you are required to create a Facebook and/or Twitter status with the day’s
specials and entertainment to let your friends know that you will be in the bar and invite them to
come out for food and drinks.
Business Cards:
All employees will receive a stack of business cards to hand out to friends, roommates,
classmates, coworkers at other establishments, and any other person. These business cards will
entitle a person to receive a free appetizer with a meal purchase. It is our hope that these business
cards will help you to promote Rosy’s Roadhouse while also offering our employees an
incentive. Please write your name on these cards in the designated area. At certain points in time,
management will take a tally of all business cards collected from patrons and offer prizes to the
employees who have brought in the most customers.
Housekeeping:
Every employee is expected to do his/her part to keep the establishment neat and maintain
sanitation standards. Speak to the manager for a list of health department standards. While each
department in the bar has their own set of duties for clean-up, it is the responsibility of ALL
employees to take care of any issues they notice whether on the clock or off. If there is trash on
the floor, pick it up. If you see any potential hazards, do what is necessary to rectify. We will not
tolerate any employees blatantly ignoring cleanliness issues.
Shift Duties:
Every employee will be required to complete duties specific to their position, before, during, and
at the end of their shifts. Employees will have checklists that they MUST utilize every night.
Failure to do so will result in disciplinary actions or termination.
Employee Smoking:
Employees are allowed to take cigarette breaks when okayed by management. Employees should
never smoke in front of the building and any employee who does go out to smoke must wash
their hands before they return to work. Please smoke around the corner of the building.

Alcohol and Drugs:
It is illegal to use, posses, buy, or sell drugs in the establishment. Employees are prohibited from
coming to work under the influence of alcohol or any other controlled substance. It can be
grounds for termination of employment. Bartenders, barbacks, and waitresses have the privilege
of taking shots while working if a customer purchases the shot for them and they have gained the
manager’s approval. Employees found taking shots or otherwise drinking alcohol without the
manager’s approval or without the alcohol being purchased may be subject to disciplinary
actions or termination. Security is forbidden from being under the influence of alcohol while
working and during the four hours before their shift begins.
Theft:
Theft of any item from the restaurant, other employees, or customers will be grounds for
termination of employment. Lost or left items should be turned into a bartender to place in the
lost and found. Failure to do so is considered theft.
Sexual Harassment:
This behavior will not be tolerated from ANY employee toward ANY other employee or
customer. Bring this behavior to the attention of the manager immediately. It can be grounds for
termination of employment. Sexual harassment to our staff by customers will also not be
tolerated. Notify security or a manager immediately if you feel you are being harassed in any
way.
Grievances:
If at any time an employee has a complaint or problem with a fellow employee, the employee is
encouraged to speak with the manager or owners. There will be no negative repercussions for
bringing any matters to our attention and we will work with you to solve all problems in an
efficient and reasonable manner.
Disciplinary Action:
Employees who fail to adhere to the guidelines in this handbook may be given a verbal warning
or be written up. All write-ups will be signed by the employee and manager on duty. While we
operate by a three strike rule; three write ups and your employment may be terminated,
management reserves the right to terminate any employee for gross misconduct at any time.
Be sure to bring this handbook, as well as your position specific handbook, with you to use
as a reference during your training.
