It is relatively easy to grow potatoes if you follow a few key guidelines. Potatoes grow up from underground tubers called "eyes" rather than seeds, and different varieties are suited for different cooking methods. To plant, cut seed potatoes with 2-3 eyes each into pieces and plant them eyes-down 5 inches deep several weeks after last frost, hilling soil and compost around the stems as the plants grow until harvesting new potatoes or after the vines die back.
