I have learned that hard work and dedication are necessary to maintain the precision and

Experience
2010 – 2015 Ellis Island Casino & Brewery – Executive Director of Brewery Operations.
I began as a brewery porter, and my duties consisted of tank cleaning, mash out, kettle cleaning
and general porter duties. I began brewing shortly after I began working at the brewery, including
mash in, mash out and yeast management. After gaining hands on experience in the field, I took
a sabbatical and attended the Siebel Institute of Brewing Technology in Chicago, Illinois, and the
Doemens Academy in Munich, Germany. After retuning from school, and under my direction,
the brewery increased its productionover 300%, becoming the largest microbrewery in the State
of Nevada (source- New Brewer Magazine). I pride myself on my seasonal recipes for which
Ellis Island has become known.

1995 – 2010 FAME Operating Co., Inc. (Village Pub, Yorky’s and Ellis Island Casino &
Brewery)-Various.
During these twenty years I learned the restaurant, bar and gaming industries from the bottomup.
In the restaurant I worked as a dishwasher, prep cook, line cook, purchaser, inventory controland
receiving. From there I moved into the casino where I dealt table games, was a slot attendant, a
casino cage cashier and worked in casino security. Thereafter, I moved behind the bar and began
learning that aspectof the business. Eventually, I earned the right to be the general manager of
my own property, “Yorky’s.” Yorky’s is a tavern and gaming bar with 15 video poker machines,
and with a small kitchen. While at Yorky’s I handled every aspectof its operations from
scheduling, payroll, inventory, ATM fills and gaming promotions.
