About
Food safety Training & Certification (FoSTaC) is a large scale
training program of Food safety & standard Authority of India
initiated with the aim to spread education and raise awareness
on Food safety & Standards Act, Rules & Regulation among food
business operators.
It is accordingly desired that all food businesses having central
licenses or state licenses should have at least one trained and
certified food safety supervisor for every 25 food handlers or
part thereof on all their premises.

Mandatory Regulations
Food Safety Supervisors are trained in good hygienic and sanitary practices to be followed by all
food business operators as per requirements in Schedule 4 of Food Safety and Standards
(Licensing and Registration of Food Businesses) Regulations, 2011.
Section 55 of FSSAI Act-
Penalty for failure to comply with the directions of Food Safety Officer.
FSO‘s are directed by the FSSAI to regulate and facilitate in FoSTaC trainings.
Section 56 of FSSAI Act-
Any person who, whether by himself or by any other person on his behalf, manufactures or
processes any article of food for human consumption under unhygienic or unsanitary conditions,
shall be liable to a penalty which may extend to one lakh rupees.
FoSTaC is all about hygiene and post-covid precautions to be maintained.
Section 56 of FSSAI Act-
Whoever contravenes any provisions of this Act or the rules or regulations made thereunder, for
the contravention of which no penalty has been separately provided in this Chapter, shall be
liable to a penalty which may extend to two lakh rupees.
Roles of Food
Safety Supervisors
1. Food Safety supervisors should carry out periodic onsite training of all food
handlers, at least on a quarterly basis and maintain record thereof for the purpose
of food safety audits and inspections.
2. To recognize and prevent risks associated with food handling in food business.
3. To train and supervise the other food handlers in the food business premises.
4. Ensure the compliance of food business with all the FSSAI’s requirements.
5. Create a behavioral change in other food handlers regarding personal hygiene,
good hygienic/manufacturing practices, safe handling of foods.
6. Responsible for incorporating the culture of food safety in the food business
premises

Basic level certification are meant for food business. Duration of each
course is of 4 hours.
Course are: - (1) Street Food Vending,(2) Catering,(3) Manufacturing /

Advanced courses and certification are for State & Central Licensed food
business. Duration of each course is 8 hours. Course are: - (1) Catering
(2) Manufacturing / Processing, (3) Storage & Transport, and (4) Retail &

Special course have been developed for high risk food business or The
food business which require special attention. Duration of special
course is 8-12 hours. Spread over 1-2 days. Course are: - (1) Milk &
