This document describes various emerging food processing technologies available at IRTA, including high-pressure equipment with a maximum capacity of 120L and pressure of 6,000 bar, a pilot-scale high pressure system with a maximum capacity of 2L and pressure of 9,000 bar, a radiofrequency tunnel 1m x 8.4m in size that can process products at speeds up to 11m/h, and a microwave tunnel with a power of 24kW.
