1. EGGPLANT PIZZA
Prep Time: 10 min Total Time: 25 min
INGREDIENTS
1/2 large eggplant, sliced into thin
rounds
½ c parmesan cheese, grated
1 T extra-virgin olive oil
1/3 c tomato sauce
1/3 c cheddar cheese, shredded
salt and pepper to taste
DIRECTIONS
 Preheat oven to 350°F.
 Arrange eggplant rounds on a baking sheet
and lightly coat with oil.
 Baked rounds until hot (5 minutes).
 Flip rounds and top with an even layer of
parmesan cheese.
 Return eggplant to oven and bake until
cheese is melted (5 minutes).
 Drop a spoonful of tomato sauce in the
center and top with cheddar cheese.
 Bake until cheese is bubbling (5 minutes)
and season with salt and pepper.
