Kujawy and Pomorze
region
The Kujawsko-Pomorskie Province joined the European Network of Regional Culinary Heritage,
which was established in 1995, in 2010 by virtue of a resolution adopted by the Provincial
Parliament and created the regional network of Culinary Heritage of the Kujawy and Pomorze.
The characteristic mark, namely a white chef’s hat, so-called toque, with w knife and fork on the
blue background and inscription: “Culinary Heritage of the Kujawy and Pomorze” confirms that
foodstuffs and dishes bearing the mark are characterised by highest quality. Choosing products
with the mark, one purchases food connected with our the Kujawy and Pomorze and made of
raw materials derived from the region and with the use of traditional recipes and methods.
The regional network of Culinary Heritage of the Kujawy and Pomorze conducts activities aimed
at supporting development of the market of traditional food based on local resources as well as
promotion of culinary tourism. Presently our network includes 31 small and medium enterprises
of the agriculture and food sector operating in the territory of the Kujawsko-Pomorskie Province.
They include ecological product processing plants, which process cereals, vegetables and fruit as
well as apiaries, dairies, butchers’, mineral water bottling plants, oil manufacturers, warehouses,
stores with high quality food and restaurants and catering companies.
Presenting the culinary offer of members of the regional network of Culinary Heritage of the
Kujawy and Pomorze, we would like to draw your attention to attractive facilities and places,
which are located nearby and are worth visiting as regards their history, culture as well as tourist
and natural values.

water streams, i.e. the Czerska Struga (flowing below the aqueduct) and the Great
Canal of the River Brda (flowing above the aqueduct). The facility is 75 m in length,
which makes it the longest of such facilities in Poland. It was erected in the years
1845-49 for the purposes of carrying the water from the Brda River to the complex
of Łąki Czerskie near Czersk.
The aqueduct may be visited following a marked route. The route leads above and

erection of the residence was a fire in the Teutonic castle, an old seat of the supreme
power in Brodnica, which broke out in 1550. Fragments of brick walls and pre-castle
buildings of the burnt castle were used for erection of the palace. In the years 1605-
1625 the palace was the home of princess Anna Vasa, a sister of the Polish king
Sigismund Vasa III. Anna Vasa was an intelligent and well educated person. She
created a strong cultural centre in Brodnica and often hosted scholars and writers in
the palace. Apart from the Swedish princess, the palace also belonged to mayors of
the Brodnica county and numerous eminences of those times. The palace may have
been a place of stay of Napoleon Bonaparte, the French emperor, who stayed in
Brodnica for several days at the beginning of 1807. The palace was extended in the
years1678-98. Following a fire of 1945, the palace was restored in the years 1960-70

The granaries in Grudziądz are located on the Vistula escarpment erecting to the
direction of the Teutonic castle ruins. In the Middle Ages, Grudziądz, owing to its
location of the river and fertile land, became a significant centre of grain trade
and, therefore in the years 1346-1365 they started to build granaries to be used
for storage purposes. The line of high granaries substituted the earlier brick wall
and, so, the buildings were included in the city fortification system. The roof ridges
of the granaries face towards one another creating a defence wall with its height
exceeding 20 m. The granaries found on the side of the Vistula were additionally
reinforced. Despite the reinforcements, the granaries were partially destroyed.
In most of the buildings gothic bricks were preserved only in on the ground floor
level and top parts were added in later centuries. In the granaries interiors original
wooden structures and beam ceilings have been preserved. At the turn of the
19th and 20th centuries several granaries were converted into houses. In 1907
a passage leading down to the Vistula was built and one can stroll along the Błonie
Nadwiślańskie along the old buildings.

Wyspa Młyńska is one of the most exceptional and enchanting places in Bydgoszcz.
What makes it exceptional is, above all, its location in the very heart of the city and
just a few steps away from the Old Market. Starting from the Middle Ages and
throughout several subsequent centuries, Wyspa was an industrial centre of the
city. It was the seat of the royal mint, which operated there with intervals from
1594 to 1688. The mint of Bydgoszcz was famous, among others, for its 100 ducats
of Sigismund III Vasa, which were, perhaps, the largest gold coins in the history
of Europe. Presently Wyspa Młyńska is a green oasis in the centre of the city with
nearly four hundred inhabitants. Most of the buildings found on Wyspa Młyńska
date back to the 19th century, however, cellars of the so-called White Granary were
erected as early as in the 15th century.
The atmosphere of the river isle in Bydgoszcz is today created by water, small
bridges, old mills, redbrick buildings reflecting in the waters of the Młynówka, its
well-maintained greenery and, above all, chestnut trees.

Today the granaries are landmarks in the panorama of Bydgoszcz. They have
a timber beam structure and were used for storage of grain. The oldest of the
granaries, being also the lowest of them, referred to as a Dutch granary with its
rounded double-pitched roof, dates back to around 1793. The other were erected
in the first half of the 19th century. They presently house exhibitions of the District
Museum. The granaries are among a lot of granaries erected in Bydgoszcz during
the period of Prussian invasion and were connected with increased transport
of grain through the newly built Bydgoszcz Channel. The Channel was to be
a convenient way of supplying large volumes of grain through Szczecin and to the
west, excluding merchants of Torun and Gdansk.
