It also examines how the rise of supermarkets and changes in consumer trends due to factors like health, busy lifestyles, and the recession impacted where consumers purchase meat. The development of organizations like the Food Safety Authority of Ireland and the Associated Craft Butchers of Ireland helped rebuild consumer confidence in local butchers.
