-Cooked Onions and Apples-

Cooked Onions and Apples 
Serving: Makes 4 
Time: 30 minutes 
Ingredients: 
3 c peeled and sliced onions 
3 T olive oil or butter 
3 c peeled, cored, and sliced firm 
apples, such as Granny Smiths 
Pinch ground allspice, mace, or 
cinnamon (1/8 teaspoon) 
Sugar, if needed, to taste 
Salt and freshly ground black 
pepper to taste 
Minced fresh parsley leaves for 
garnish 
Directions: 
1. Place the onions in a large, 
deep skillet over medium heat 
and cover. Cook for 10 minutes, 
stirring once or twice, until they 
are dry and almost sticking to 
the pan. Stir in the fat. 
2. Add the apples and spice. Turn 
the heat to low, cover, and cook, 
stirring occasionally, until the 
apples begin to soften, about 10 
minutes. 
3. Uncover and taste; add sugar if 
the apples have not contributed 
enough sweetness. Season with 
salt and pepper, turn the heat to 
medium, and cook until the 
apples are completely tender but 
not mushy, a few minutes more. 
Garnish and serve.
